Hello May!

Hi guys, we made it to Wednesday and May amazingly enough! Actually this week hasn’t been that much of a drag for me. The sun has been shining and work has been good. Aaaaaaand we booked a holiday! I am so excited about this. We are going to…*drum roll* Mexico! We’re heading for 10 days all-inclusive to a resort in Playacar for September of this year to celebrate our one year wedding anniversary. I’ve never been to an all-inclusive so this is rather exciting for me.

Usually I’m not a beach fan as I get bored. There’s only so much lounging around I can do. But with this resort they have loads of planned activities, sight-seeing opportunities and water sports. It’s a compromise between Ben and me as Ben likes holidays where he does nothing (bless him he could have two weeks off just playing the Xbox I imagine) but I need something to do. So this works out well!

Right, enough of that. It’s time for What I ate Wednesday.

Soo this is what I had yesterday.

Breakfast has been the usual business. Oatmeal, almond milk. Fabulously filling though, yes, predictable….

Boring maybe, delicious definitely.

Lunch has been my usual salad. With tuna and lots of veggies.

Next I had popcorn, which I currently have a huge obsession for at the moment.

I prefer it salted for lunch, though I do love sweet popcorn too. Or a mixture…yum.

And then for afters (do people still say that??) I had Greek yogurt with organic strawberries. Oooh err.

I thought I’d go crazy and push the boat out and have some organic strawberries as they weren’t that much more expensive than the normal ones (and, if you caught one of my previous posts, I’ve been doing some thinking about organic). It’s crazy that alongside the British strawberries you can buy Spanish ones cheaper. What a way to make people buy locally sourced! Ha. Come on, Britain, get behind your farmers.

An honourable mention needs to be made to lunch on Sunday though as it rocked my world.

Roast chicken, roasted butternut squash and broad beans…with of course:

BBQ sauce! I didn’t actually use any of the apple and fig chutney as the BBQ sauce stole my heart. Though the chutney has been a star in many salads. Both are keepers. Yum.

Work snackages have been in the form of my Graze boxes…

In the box I got mini banana cake with an ‘afternoon infusion’ teabag, some pretzelly things, crackers with a salsa dip and some Japanese crackers. Fabulously tasty.

Dinner last night was a new-to-me recipe. I was inspired by Jess’s recipe HERE.

I really enjoyed these stuffed peppers. I filled them with lean beef mince cooked in chopped tomatoes, herbs and some crumbled beef stock cubes. I ten added a big tablespoon of cream cheese just because Winking smile

Then I popped the mince in the peppers and oven cooked them for about 15 mins. I love this photo of the peppers in the oven. Bless Alfie for photo bombing.

I popped the peppers in a muffin tray to make sure they didn’t fall over and it worked well! Ben and I had two of these bad boys each.

I had mine with broad beans. Really enjoyed this meal.

Evening snackages come in the form of some chocolate that really needed eating (doesn’t it all…?)

These were from a box of truffles that we’ve had loafing around for ages. I’m forcing myself to use up all our chocolate supplies before allowing myself to buy any more (specifically Lindt). Otherwise we just get backlogged with chocolate we’re not going to eat because there’s always the better Lindt option. *sighs* It’s a hard life I know Winking smile

I snack on other stuff during the day (fruit & Snack a Jacks) but it’s all fairly standard and boring!

Fitness-wise, it’s been my standard running. Last week I managed to get my mileage up to 32.5miles!

  • Monday: 6 miles tempo
  • Tuesday: 3 miles interval
  • Wednesday: 5.5 miles no particular goal
  • Thursday: 8 mile with the running club
  • Friday: rest
  • Saturday: 10 mile long run
  • Sunday: rest

I’ve been loving it! My body seems to be copying well, no twinges, no aches, no nothing! Though I have been gently increasing my mileage to help prevent any shocks to the system.

I love the variety I have as well. Monday and Tuesday are solo runs stupidly early in the morning (but lovely and light now thankfully). Wednesday is a lunch-time run usually with guys from work. Thursday is my running club and Saturday is my favourite long run listening to a good podcast.

Nothing else to report. Did I mention I’ve booked a holiday to Mexico…? Shoot, I already did? Whoops Winking smile I promise I won’t go on about it hehe.

Runners out there, what kind of mileage do you like to hit during a week?

Do you, like me, hate wasting food? The chocolate truffles are no where near as good as Lindt but I can’t throw them away. I hate throwing food away!!

Favourite sauce – ketchup? BBQ? Mustard?

    1. Ahh Maldives was one of our top choices too! It looks amazing there. And you’ll be enjoying the lovely weather out there while it’s miserable in Britain hehe.

  1. Mexico? Anna, that is so exciting! You are going to have an absolute blast!! We are taking our vacation in September too (either Hawaii or visiting our family in the states).. so we can totally do a countdown together!!

  2. I really hate wasting food – I plan my week quite carefully to make sure I waste as little as possible of the fresh ingredients I buy. I love your outfit – the dress is really nice 🙂 My favourite sauce is ketchup, or mayo…actually is mayo a sauce?

  3. That Mexican trip sounds like something you really deserve. I hope you two have fun! Lots to do… I’m the same way. When I went to the beach last summer, one of my friends assumed that it meant we were going to lie on the beach every single day, all day. Haha. She had no idea what was coming. Our trip was packed with stuff to do. I hate sitting around on vacation and doing nothing!

    I hate throwing away food too so I try to come up with recipes that use it all up. Calzones for leftover vegetables, cheese and meat. Candy pizza for leftover chocolate/candy/snacks. Trail mix for leftover nuts, raisins, etc. Soup for leftover vegetables. Salads for leftover fruit and vegetables. Omelets for leftover stuff too… So yes. I hate wasting things 😉

    I’m dying to try stuffed peppers! Because I am a college girl living in a dorm, I don’t have access to a kitchen, so I have yet to whip up a batch of my own. Only one more week and I will be able to!

  5. Oh my gosh yes I totally hate wasting food!! I’ll either it or find someone who will lol
    I love making stuffed peppers, but my hubby isn’t a fan so I only make 2 and then take the extra one to lunch for work 🙂

    1. Ahh the curse of the hubby’s tastes. I have a similiar issue with my husband. He despises the majority of the food I enjoy. Mainly anything that looks relatively healthy haha.

  6. People are always like ‘then I put so many toppings on my oats!’ but I love them plain. Something about the flavour is delicious and pairs well with nut butter. There is mostly always cinnamon involved, however.
    I got graze boxes whilst abroad. I used to have them for afters too (I’ll say it if you will!)
    broad beans. I don’t think they’re super popular in the states, look a bit similar to limas? Look good though.
    I hate wasting food. I hate it more when other people waste it haha and they hate when I mention it.
    In terms of sauce, mustard all the way!

    1. Ahh plain oatmeal all the way 🙂
      I’m not sure what the US call broad beans – maybe fava beans? Do you have those?
      I’m convinced I don’t like mustard but I haven’t had it in YEARS so maybe I need to try it again!

I could lay around all day by the ocean and be a perfectly happy camper haha, although I guess sitting still that long can actually drive me a little crazy. And I love your running routine you’ve been in! So awesome that you found a groove that’s perfect for you. And last but not least, love that outfit! Totally looks like something I would wear too 🙂

    1. I know, Ben hates that I’m not a beach lover. He could literally lie there all day long. I need to be doing something, like exploring or watersporting. Well we’ll see how the tide changes once I’ve had a few cocktails hehe.

    I have never been all inclusive, sounds very posh!
    I know what you mean about the chocolate too, we still have some Christmas stuff, but I have some nice hotel chocolat stuff, so that is getting eaten before the rest of it!

  10. I’m so so excited for you to go to Mexico!! Are you going to the Riviera Maya/Cancun area or the Pacific side? Both are lovely, however I do have my favorite…I won’t tell you which it is, though, just in case you chose the other. Haha! I think you’re going to LOVE the all-inclusive. It’s pure relaxation because you don’t have to think about money once you’re there. You eat when you want, drink when you want, beach when you want….it’s truly glorious. I’m the same way when it comes to lounging, though—I can only lie around for a few hours before I become dead bored, but I promise that won’t happen! There are so many fun activities to do!

    Umm, I’m also majorly addicted to popcorn right now. I’ve been eating it every afternoon, and at the rate I’m going, don’t think I’ll ever get tired of it. Or maybe that means I will? I don’t care…I’m enjoying it lots right now–both salted and kettle corn (sweet and salty).

    Your stuffed peppers look delicious! It’s been far too long since I’ve made any stuffed vegetables for dinner, which is silly because I really enjoy them. As for the chocolate, I *never* let it go to waste–ever! Every piece of chocolate that enters my house is eaten, but some takes longer than others. *Cough…Hershey’s…cough* I can totally commiserate with the Lindt temptation, though! 😉

    1. I’m so excited about the holiday! It’s in Playa Del Carmen, just south of Cancun I think. No idea really where that is but the picture had beaches. And sunshine :))
      Ahh popcorn. Yep it’s still going strong. I adore it. Thouh I always manage to get popcorn someone on me without realising it. Fairly embarrassing.
