Comfort food heaven

Isn’t it lovely that it’s the weekend? First ‘proper’ week done and dusted, Christmas just a blissful memory now. One of my highlights of this week? My dad falling asleep in a meeting at work [I work at the same company as him – though we rarely work together]. And my dad snores so loudly like you wouldn’t believe so it was pretty noticeable. It was quite funny. In his defence, the room was quite warm and the meeting wasn’t exactly what you’d call scintillating. As my dad is part of the top management team he sort of gets away with it, but it didn’t stop people giggling haha (me including).

Speaking of my dad actually, he is trying to get healthy this year. He’s got some weight to lose and is doing something about it! We have a teeny tiny gym at work:

Basically two bikes, one treadmill, one elliptical machine, and one rower. But he went and did 20 minutes on the treadmill at lunch! I was so proud. And he’s being more mindful about what he’s eating. I just hope he keeps it up!

So the weekend started with my new favourite meal on Friday night. I based it on THIS recipe.

Easy Chicken Paprika (serves 1)

  • 1 medium sweet potato (really depends on how hungry you are – I was very hungry)
  • Chicken breast, cubed
  • Small onion, diced
  • Approx. 1 cup vegetable/chicken stock
  • 1 tbs. cream cheese (I used light)
  • 2 tbs. paprika

[I didn’t have any cayenne pepper so I used a few herbs (thyme & rosemary) just to add some depth.]

Grate the sweet potato (I didn’t bother peeling).

– Sauté the onion in a bit of oil until soft, then add the sweet potato. Let the potato soften for a bit.

– Add the chicken and paprika.

– After about 5 mins, add the stock and turn down the heat a bit.

– When the liquid has been absorbed, add the cream cheese and stir it all up until nice and creamy and hot.

– Add herbs then serve!

It was really filling and deliciously comforting. The original recipe calls for sour cream but I only had Philadelphia cream cheese so I thought it wouldn’t matter too much. It was so good. Definitely a keeper.

Saturday morning I got up, walked Alfie, then went for a 6 mile run.

I’m gradually increasing the length of these longer runs each weekend and it’s going well. I quite enjoy them because the ones in the week are tempos, or intervals, or speed runs. So there’s a lot of focus on actual running while you’re running that’s needed and they’re quite intense and tiring runs. But even though the weekend run is longer, it’s a lot more relaxed. I can let my mind drift and just run. I do look at my Garmin to make sure I’m not slacking of completely though and try and maintain an 8min/mile speed as it’s a comfortable but still hard pace. I’m just scared about getting to the 8 mile plus runs as there the runs I haven’t done much of at all…

Then I showered, ate breakfast (standard oatmeal) and hopped off to Pilates. It’s starting to get tougher now that we know the basics. Lots of repetitions and harder movements that really give a burn to my muscles. And this morning (Sunday) I woke up feeling very sore.

Ben and me then took Alfie for a lovely walk enjoying the fabulous January weather.

Absolutely tipping it down. It was cold, wet and miserable.

But lunch was warming and comforting! Butternut squash soup with chickpeas.

I also added some coconut milk to it to add some pa-zazz. I had cunningly frozen some coconut milk as I didn’t get through the tin last week. I used an ice cube tray which was great as it meant just popping a load of these bad boys out and dropping them into my sizzling soup.

However, just ‘popping’ them out proved to be a bit of an issue as they seriously weren’t happy about coming out. In the end I used a knife to ping each cube out. And there ensued cubes of coconut milk being pinged straight up to the ceiling and flying back down. Hilarious.

Anyway I dropped the cubes into the soup and they melted away. I then blended it all up and put half a can of chickpeas in and heated it through. Perfect!

After lunch we went to town to buy a few bits and bobs and enjoyed a lovely Costa as well. Heaven knows why I chose an iced cappuccino…

IMG_3446 And we bumped into my parents and my niece, Ellie, which was lovely. So we joined them for a shoe shopping session for Ellie.

Though to be honest, shoes were the last thing on her mind. Everything else on every single shelf in the universe was where her attention was.

For our last purchase, I realised I needed a potato for dinner so we popped into M&S.

Felt a bit silly just buying a potato but what can you do!

Then Ben and me went home. We were shattered by this point and just wanted to be warm and snug inside. And I wanted to wear my new PJ bottoms!

Then I chilled out on the sofa while Ben played on his XBox and I did some reading.

Bliss.

Then it was dinner! I decided to make cottage pie. A two-toned cottage pie! I vaguely followed THIS recipe (but didn’t use ramekins). I used beef mince (this is a shocker as I rarely ever eat beef – I’m just not a fan, it’s a bit tough and dense for me if that makes sense?). I also didn’t have mushrooms and used regular flour instead of potato starch (I’m not even sure what that is). But basically I followed the recipe.

After browning the mince, onion etc. and getting things lovely and tasty I threw it all into a casserole dish. Now, at this point I veered off the beaten path of the recipe. There’s no way in hell I can get Ben to eat cauliflower mash. I mean seriously he won’t. So I peeled, chopped and boiled the above M&S potato while also making my usual cauliflower mash with a goat’s cheese Babybel mixed in as I’d run out of proper goat’s cheese. Then I mashed both sets of, er, mash and covered one half with potato and one half with cauliflower. Then put it in the oven for about 15mins.

Then proceeded to eat a MAMMONTH portion. But with cauliflower rather than potato I wasn’t over-stuffed by the end but comfortable full (remember, I’m a greedy girl!).

Then the evening was spent chilling with blog reading and internet surfing while Ben played a crazy game…Geometry Wars? Anyone heard of it? It’s quite stressful to watch. Lots of shapes flying about the place and colours exploding. It’s so fast paced, I found it quite gripping to watch haha.

What I Ate New Years Day

Happy New Year everyone! Wow it sucks to be back at work. The alarm went off at 6am this morning, which definitely makes a change from my usual 8ish wake ups this past holiday. There’s something so indulgently lovely about opening your eyes naturally and deciding whether to roll back asleep or gently get up. The alarm screaming at me to wake up, however, was not.

Despite this, I am glad to be back into normal routine. There’s only so much lounging around the house that I can really do. I do get a bit of cabin fever. And I am back at the usual office so this means my commute is under an hour – possibly even 35mins! Not like the hour and a half (sometimes two hours) that it was when I was working on the customer site before Christmas. It’s heavenly.

Anyway, it’s WIAW – first for 2013! Check out Jenn’s blog for more details. Let’s get started.

 

This is what I ate yesterday, New Year’s Day, with a recap of my New Year’s Eve.

Ben and I went to our friend’s house for dinner and a games night on New Year’s Eve. It was so much fun. It was two married couples and another guy and us.

They made chilli con carne for dinner with a roasted potato and salad, which was divine (I believe they used a Jamie Oliver recipe, so perfect in my eyes!) And pudding….well pudding was a mini Eton mess with fruit on top, a lemon cheesecake and bannoffee pie. I might have had all three (half a bannoffee pie serving I hasten to add!) Well, when you’re offered… Unfortunately I didn’t take any photos as it seemed a bit rude. But I can assure you it was yummy. And I was stuffed. There might also have been a couple of cheeky G&Ts and some bucks fizz.

Then we played a quiz game which was brilliant and then Mafia. Do you know Mafia? I didn’t before playing. Two people in the group are named mafia (they find this out by what card they pick from a bunch) and thennon-Mafia people are blindfolded and then the Mafia ‘murder’ one person. Then the group has to work out who the Mafia are, and it continues in that vein…it sounds very complicated but it was actually very simple. And we had been drinking!

Then we celebrated midnight with champagne, watched some fireworks and Ben and me then had to make our journey home. We decided not to get a taxi as it would be ludicrously expensive so we walked home. All 45 minutes of it…but this was great as it sobered us up nicely. And people are so friendly saying Happy New Years even at 1.30am!

As we woke up quite late the next morning (*cough* 10.30am), I decided to skip breakfast and put our lunch in the oven ready for lunchtime…turkey again!

New Years Day

Oh it was so good. Turkey with onion and cranberry stuffing, roasted parsnips and carrots, broccoli and cauliflower and a dollop of cranberry sauce. Heaven. And by 1.30pm I was definitely ready for it!

Then I had some melon for pudding.

Ben and I then slobbed out on the sofa watching Harry Potter and The Chamber of Secrets (slowly working our way through them all again) and then I watched several Nigella cooking programmes. I adore that woman. She is just mesmerising. She can make boiling an egg interesting.

Then dinner seemed to swing by in no time (after a fair number of cups of tea). I decided to go for a lighter meal after the monster feast at lunch. So I made my new favourite meal – chicken soup! OK sorry I know this might be boring. [And apologies for the re-used photo!]

It was nice and warming. Then I had my obligatory two apples afterwards for pudding and then a bit later a packet of Snack a Jacks and a hot chocolate. Simple, but it hit the spot!

Also, I must mention this meal that I had the other day which was amazing.

Goats cheese cauliflower

Chicken rolled in chickpea flour and herbs and spices (paprika, onion powder, cumin, basil, & thyme) then fried, roasted butternut squash, steamed broccoli and then the pièce de résistance…cauliflower mashed with goat’s cheese. Ah let me tell you, this was fabulous! I normally have cauliflower mash with mozzarella but the goat’s cheese was just 100 times better.

And, thankfully, my running is getting back to normal! Hurrah! I’ve been having some issues with running since being ill in that it’s felt so hard. Like harder than normal. I couldn’t sprint or do any tempo runs. It was all about just making it to the end alive. But this morning I went for a 3 mile run and I added in some tempo bits and raced along happily! It felt like a normal run. I’m so pleased! Especially since I’m now on week two of my 12 week training for the half marathon in March. Whew.

Not my fastest 3 miles, but definitely back into a good feeling when running! I missed it so much (yes, yes I know I sound like a loony but it really makes you grateful to be healthy when you’ve been ill for a period of time).

Oh and on a side note. Seeing this as I walked into work this morning was fairly devastating:

A Christmas tree in a skip!! How soul destroying. Our decorations are still up and won’t be brought down until Saturday…I just find it so sad that it’s all over!

Christmas and Boxing Day

Well, doesn’t Christmas just zoom by? It’s sad how quickly it’s flies by. But I had such a lovely time! I feel so much better than I did thankfully. I still have a cough but my body no longer hates me!

Christmas morning I woke up early, got my running stuff on and went for a run. Hurrah! It had been far too long. And it definitely felt that way – it was really tough, like I hadn’t been running for months! How depressing. Also Christmas day was absolutely tipping it down so I only ran 2 miles – and definitely not a fast 2 miles! I started to get worried I was going to make myself ill again because I was soaked through. Luckily though I was fine.

Then I had a steaming hot shower and got dressed ready to face the day! Because I am quite boring and predictable, I just had my usual porridge for breakfast (sorry re-used photo).

The only sad thing is that I haven’t been eating my usual amount as I my stomach isn’t quite back to normal yet in terms of quantity food in the morning. So I had a smaller bowl, which I guess is a good thing considering there would be a lot of food later!

Then Ben’s mum came over to spend the day and my parents dropped by to give us some gifts. I got some brilliant presents. From my parents:

I am so pleased about the waffle maker!! I can’t wait to make some yummy fluffy waffles. And the Game of Thrones book is amazing. So many beautiful photos and behind the scenes information from the series. I am 75% of the way through the fifth book. It is EPIC. I need to read something lighter afterwards I think, it’s quite intense.

Then when my parents left I got into the kitchen and got things going. I put the two turkey joints that we were having in the oven, peeled carrots, washed parsnips, prepared the stuffing…and then when everything was in the oven I prepared our starter. I didn’t take a photo but we had little bite-sized cream cheeses wrapped in smoked salmon.

Because I had a fair amount to do I bought them ready made – don’t kill me!

Then the main event. My favourite meal of the year. I was so worried when I was ill that  wouldn’t fancy it or have an appetite for it, but there was no issue hehe.

Absolute heaven! I roasted the parsnips and carrots in a little oil, salt and pepper and a tiny bit of treacle to make them sticky. Devine!

Because we were all stuffed and Alfie was antsy, it seemed liked a perfect time for a post-Christmas meal walk! OK, maybe I was the only one excited about this. I just love being nosey and seeing through people’s windows and what they’re up to [OK, to clarify, I don’t actually go up to the windows and peer through like a stalker!!].

Ben wasn’t too keen on leaving his new Xbox games for a walk, but what can I say? We’re married and he is scared of loves his wife.

Then we came back and had some pudding. I had my standard apples as I’m not a fan of Christmas pudding. Listen to this, Ben had brandy butter, brandy cream and Courvoisier cream with his. He said he felt quite sick afterwards haha.

However, later I did treat myself to my most favourite cake in the world.

It’s soo rich and delicious. That was supper!

Throughout the day we opened presents of course. I got some amazing gifts. Lots of running gear from Ben’s mum which I’m so pleased about as I never buy running stuff and it’s nice to have some brand new clothes!

I got a beautiful necklace stand, a couple of scarves and necklaces, some Next vouchers (amazing), DVDs and Jamie Oliver’s new cook book…and more!

I really am very lucky and very grateful. One of the best presents? ONESIES!!!

And then we played some cards and just chilled. It was perfect! Time well spent with the family.

Boxing day was a bit more mad. I had invited everyone over to ours for a Boxing Day buffet. I had set myself the task of making lots of bits and pieces for people to eat. So I spent the morning cooking and preparing for everyone (Ben’s mum, my parents, my granddad, my sister, brother-in-law, niece and obviously Ben & Ben’s dad who were already over).

I made hummus, tomato salsa, smoked mackerel pate, chopped some veg for crudités, sticky chicken bites, broad bean and courgette salad, normal salad, garlic bread, prawns with lemon mayo dip, and then some bits we bought like ham and sausage rolls. Ben was Mr Drinks when everyone arrived – which he does so well, bless him. So attentive! I just ran around like a headless chicken getting food together.

I was starving by the time we began eating. I guess cooking for like 5 hours does that to you!!

And then we watched Ellie, my niece, open all her presents from my parents, Ben and I.

It was madness with so many people in our tiny house but it was such a lovely day. And I think everyone liked the food, which was such a relief as I was so worried.

Shattered! But a brilliant couple of days. And now we’re living off leftovers – which I personally think is the best thing ever.

In Bruges – WIAW

Hi all. Apologies for the long delay. We got back absolutely shattered from Bruges on Sunday night and then from Monday I’ve been suffering from being ill and just want to stay in bed all day. I went to work yesterday but just felt so ill I had to come home. So I’m currently camped out on the sofa (in a ‘nest’ as Ben calls it – lots of blankets) feeling very ill and very sorry for myself.

So I’m writing this post and then going to sleep. Sounds like a plan. I thought it might be fun to do my WIAW as What I Ate in Bruges.


We got up at an ungodly hour to drive to the station to grab the train to Waterloo, to then grab a taxi to St. Pancras, to grab the Eurostar to Brussels, a train to Bruges and a coach to the hotel. WHEW!IMG_3136

This is us hanging around St. Pancras. I was very pleased to have that coffee!! For breakfast I grabbed a chicken wrap from M&S and some fruit. In terms of breakfast options at train stations there’s not much really that aren’t pastries or at least resemble something healthy!

As my dad works in the company as well we travelled with my parents which was nice. When we got to St. Pancras we met up with the other guys from the company and we were given a goodie bag per couple which we opened on the Eurostar. It contained sandwiches for lunch (which we didn’t actually need as the Eurostar served food), chocolates, Christmas cake and a mince pie, a Bruges guide book and champagne!!

Let’s ignore the fact that it was 11am. When the boss cracks open his champagne, you know you’re free to do the same! We amused ourselves by reading magazines, eating and playing hangman. Everyone was in great spirits (as you can imagine!)

Soo after much travelling we arrived in Bruges! And the hotel was beautiful.

On the Friday evening we had a quick wander around Bruges before showering and getting ready for our mussels and frites night out.

It was just lovely and I was very excited about our next day outing to explore the city. But first the dinner. We got dressed up reasonably smart…

And then met up in the hotel bar with the other guys who were going as well. And this is when I began drinking…I thought that I must try the beer as it’s a speciality in Bruges. However, it is very strong. I’m not usually a beer drinker but it was nice.

And then we moved on to the restaurant. The starter was like a little preparation of what was to come.

Some spaghetti, tomato sauce and a few moules. And then dinner was just a MAMMOTH bowl of never-ending mussels and chips.

They just kept bringing them out whenever we got near the bottom. And honestly, I couldn’t stop. They were so damn tasty. As were the gin and tonics… whoops. So needless to say that I never want to see another mussel again for a while at least. And in the morning I was pretty certain I’d never drink another G&T again either!!

So I woke up Saturday morning feeling a little delicate. But I enjoyed a nice breakfast in the hotel of smoked salmon, scrambled eggs, a seeded roll and a slice of fruit bread.

We spent the day walking around the beautiful buildings and streets and, of course, the shops.

We went into a lot of chocolate shops, as you can imagine…and brought a fair amount home!

We stopped for lunch in a tiny little tearoom. Tearooms were prolific in Bruges; all very small and quaint. I chose a light smoked salmon salad as I knew Saturday night would be quite a big meal.

Very yummy and freshly prepared. We then looked around the Christmas markets and partook in some more ‘must-do’ Belgium activities…i.e. eating Belgium waffles!!

It was surprising how light and fluffy it was. The texture was very pastry-like rather than stodgy pancake. I’ll pretend that made it healthier hehe. And Ben enjoyed some gluhwein (mulled wine).

I wasn’t quite ready to begin drinking just yet…

So after a quick nap, Ben and I got ready for the big evening party. We had a pre-dinner drink in the hotel bar with everyone (yes, this is how it always seems to start) and then left for the restaurant where we given champagne and canapés. Very posh.

Then we sat down for dinner to begin. You know you’re in for a good meal when there are FOUR forks.

Very yummy! Then the music started and people got up and danced, my parents leading the way!

So I obviously tugged Ben onto the dance floor too, along with all the other smiling wives and grumbling husbands haha.

Then there was sorbet to ‘cleanse the pallet’.

Then followed the main. I went for a trio of dover soles.

Chocolate mouse in a bauble!! The top bit was marzipan. How cool is that?? And yes, it was DIVINE. I kicked myself for not ordering it.

And, honestly, if that wasn’t enough there was then cheese. And THEN muffins and chocolates!!! I was finished by nibbling at the cheese though. I mean if anyone seriously had room for the muffins I applaud them. The person I was sat with though jokingly threw all the chocolates in my handbag. And there they stayed Smile They are now in the fridge. Hey, you gotta take what you’re given!

So we got in fairly late after much dancing. And woke up feeling fragile…to have an EIGHT HOUR journey home (coach, two trains, taxi, another train & car). Needless to say I was in bed by 9 and fast asleep Sunday night! It was a brilliant weekend though and very lavish. I felt very lucky to be enjoying it all to be honest. I knew the parties were good as my dad has been with the company for over 15 years…but seriously, it was amazing.

Unfortunately I am now suffering from feeling very ill. I guess I partied a little bit too hard. And no, I have done absolutely no exercise since Wednesday. And until I feel better I won’t be. Humph!

Busy, busy!

Hi all! Well today Ben and me were off and won’t be back to work until Tuesday. Wheeee long weekend! Today was anything but relaxing though. We had a million things to do before we dash of to Bruges tomorrow for my work Christmas do. And, OK, we might have gone to see The Hobbit too…important things needed to be done obviously! [The Hobbit was amazing. I am a huge Lord of the Rings fan and was pleased how true it remained to the other films].

Anywho, before I go into my busy day… two lovely ladies nominated me for the Liebster award. Thank you Sandy (a great vegan blogger) and Elle (causes me to have massive food envy whenever I look at the amazing baking she does every week). liebster-blog-award

I know this is quite a late post for this as this was going a while ago..so here’s my 11 random facts about myself!

1) I eat at least four apples every day. Always chopped.

2) I have a secret love for movie music…I’m not talking about soundtrack songs, I’m talking actual original scores. Some of my favourites being Atonement, Jurassic Park, The Village, and Memoirs of a Geisha…. My favourite composers: John Williams, James Newton Howard, Hans Zimmer, Thomas Newman, James Horner… I am a film geek. And I am proud! I am a big believer that the music helps make the film.

3) I’m am always reading a book – I can’t remember a time when I’ve never not been reading something. I like to read with my breakfast – it’s my calming morning ritual.

4) When I’m alone in a public toilet and there’s music on I like to have a quick boogie while I’m washing my hands. I haven’t been caught in the act yet but I guess it’s only time…

5) Sometimes when I’m bored I daydream about end of the world scenarios. Not in a depressing way but in a ‘what would I do’ way. Like zombies attacking. What would be your first action? I’d get the family together (in my scenario we’d all be OK) and then head to the local supermarket and fill the car with tinned goods, then head to the docks, grab a boat and sail out – zombies can’t swim (or in my scenario they can’t)! These are important things to prepare yourself for.

6) I pluck my eyebrows every single night. It’s my night-time ritual.

7) I hate pasta. And not because of some faddy health reason. I hate the texture and I hate the taste. So you won’t find any pasta recipes here I’m afraid.

8) I will always wake up at least once in the night to pee. Apologies if this is TMI. I know this isn’t healthy, but I tend to have a hot chocolate before bed most nights…and well, you know.

9) I cry very easily. If Ben just mentions the Time Traveller’s Wife to me I will cry.

10) Mars Attacks caused me several months of trouble sleeping when I was younger. It scared the hell out of me.

11) If I could choose a superpower I’d be invisible. I’m so nosey, I’d love to know what celebs get up to away from the cameras!

Sooo, today. This morning I got up early and made some vegan cookies in my pyjamas. I have never made anything vegan in my life before so this was quite a challenge to a) find a recipe and that didn’t involve crazy ingredients which I didn’t have and b) to actually make them! They’re for the cookie exchange Tamzin is hosting and my partner (Sarah) is vegan. It was fun though!

Then I got dressed…

And then Ben and I dashed off to Southampton to take back my first unsuccessful outfit for the Christmas do. We had originally bought it from John Lewis using vouchers. When we returned it we assumed we’d just get store credit – but they gave us cash back!! Hurrah! Almost like free money. Sort of.

We also picked up Ben’s suit (proper penguin suit for the Christmas meal Saturday night). Then we had a quick early lunch. Originally we were going to have Nando’s but they weren’t serving until 11.30 and The Hobbit began at just after 12 so it was pushing it too close. So we settled for Cafe Giardino instead.

A chicken, bacon, spinach and basil ciabatta. Very filling. Then we dashed off to the cinema and watched The Hobbit sharing a large popcorn. I’m sorry but how expensive is popcorn at the cinema??!!! A nice treat regardless.

Three hours later we then zoomed home to post the cookies before the post office closes and then drop Alfie off at his dog-sitters while we’re away. He’s being looked after by a lovely old lady who’ll take great care of him…but it still hurt my soul to say goodbye to him. Those big furry eyes looking at me all accusingly…

Then Ben dashed off to get his hair cut while I packed. Then made dinner.IMG_3127

BBQ ribs from the freezer, roasted veg and salad that needed using up. Basically a ‘I don’t have any food and am going away the next day’ kinda meal. I love ribs though so this was a winner.

And now we’re chilling. Whew.

I won’t see Alfie until Sunday night so I gave him lots of cuddles last night before he went to sleep.

So tomorrow is a very early start. The taxi is picking us up at 6.20am and then catch a train to London and then the Eurostar to Brussels. I’m so excited about the Christmas do and looking around the Christmas markets!
