Sweet Sunday and WIAW

So last post I mentioned that I had very busy Saturday with lots of wedding arrangements and having lunch out with my mum and sister. Sunday was equally busy as well. We had our ceremony rehearsal at the church in the morning after the Sunday service, and all the ‘main players’ (ushers, bridesmaids, etc.) met us there and we had a dry run-through.

It was quite surreal and we joked all the way through it. Like my dad and me did a funny walk together up the aisle. People objecting to our marriage. Then when Ben was repeating his vows I kept winking at him or pulling faces so he kept laughing. It was very funny and the vicar joined in as well. It made things a lot less scary!

Then from there we went straight to our reception venue to go through the final details and timings. So I feel a lot more ready now. I know what’s going on and that everything is pretty much sorted.

Then came the fun part of the day; buying our sweets for our candy buffet. We looked in old vintage-style sweet shops but it was all a but too expensive (but I enjoyed looking anyway – anyone else get excited by things like that??)

So then we went to more cheap shops to get better value for our money.

And then it was a case of deciding which jars which sweets would go into.

This was fairly difficult as I didn’t want to open any sweets yet so they would keep fresh for as long as possible…so it might need tweaking on Friday when I’m sorting out last minute details.

The doilies are great! I love the vintage look. And the paper plates will be for cupcakes that my friend is baking me for the day.

So it’s going to be a plethora of sweet goodies…I’m so pleased with how it’s turning out! I’m absolutely the least creative person, so this is pretty good for me. I got all the jars from charity shops so the costs have been kept down.

And I’m chuffed with the table favours too. I bought the paper bags from Amazon for like next to nothing and got some ribbon from Hobbycraft. Each table has a sweet name (like Jelly Babies or Liquorice Allsorts) and then each person on that table gets a bag full of that sweet. Top table gets a mixture of everything (win!).

As always, I’ll show you a bit of a mix of meals as Wednesday isn’t usually that exciting in terms of meals…

Breakfast is usually the same every day (apart from random pancake days!):

I mix about 1/2 cup of oats with 1tsp of wheatgrass and a sprinkle of ground flaxseed (a new addition!) and then unsweetened almond milk. Nuke in the microwave for 3.30 mins (stirring half-way) and it’s good to go!

Fills me up really well until lunch time (which is like a good 4.5 hours later!).

Then lunchtime [at work I usually have a tuna salad or homemade veggie chilli that I batch make at the weekends]. But I’ll show you a lunch I had at the weekend which rocked my world. Home-made hummus:

Chickpeas, lots of herbs (mixed and coriander), lots of minced garlic, lemon juice and a big dollop of tahini paste.

Then whizzed up in a food processor.

I had this with salad, chicken and one of my new favourite chutneys (Cheeky Monkey – banana chutney!)

Lovely. Really sweet and flavoursome, which complimented the hummus perfectly!

Dinner (from Friday night) was hands down the best meal of the week! Cauliflower pizza. The base was made with grated cauliflower, one egg and a big blob of goat’s cheese. I baked this for a few minutes, then added a tomato base…

Then I threw on lots of toppings (more goat’s cheese, chicken, mushrooms & courgette) and baked for about 8 mins.

Doesn’t look like pizza, granted (except that it’s round) but it tasted gooood and I was stuffed.

Snacks…well I thought I’d show you my every day dessert after dinner:

With the wedding coming up I’ve not been that adventurous with my cooking (there are quite a lot of repeat offenders) but during my honeymoon I hope to have some very exciting eats!!

Workouts have been fairly standard. I did manage a quick interval run on Sunday (2 miles) despite not thinking I’d get anything in. And then yesterday I ran another 2 miles and did some core workout. I can now hold a plank for 3 mins, woohoo! Abs of steel! *Cough* Well, moderately firm.

WIAW #6–Hello September

Hi lovely readers! I can’t believe it’s September. It’s just crazy how quickly it’s come around. September for me (and many others I’m sure) is a month of new beginnings or changes. School, college and university always started this month. And I loved that feeling of “what would this year bring me” and how I could make it better than the last year. Then when I left university it was when I started my first ‘proper’ job. Then it was (well, supposed to be) when Ben and I were to move out. Unfortunately the house wasn’t ready and we had to wait a bit, but it still felt like the start of something new.

But I also find September a little bit of a sad month. The summer is coming to an end. The nights are drawing in. It’s getting colder (in the morning especially). It’s dark when I get up. It’s fairly depressing. It’s only going to get worse…But let’s keep positive, people, summer hasn’t actually finished yet! It was boiling yesterday so fingers crossed it stays nice…at least until after 22nd September Winking smile

On to WIAW. Thank you Jenn for hosting! And our first one for September! And the theme is ‘Good Habits’. I like this theme.

Soo breakfast…I’ve got a little bit of a problem…I’m slightly addicted to pancakes. I can’t stop eating them. The problem is though that they’re a bit fiddly to make during the week when I’m trying to get off to work quickly (bad times). But at the weekend they’re amazing. And as per my usual standard, I added a tsp of wheatgrass. Perfect green little pancakes!

I just love how fluffy they are and the blackberries just make them perfect.

And it’s not complete without a drizzle (a hefty drizzle) of PB2:

They’re not quite as filling as my usual hot oatmeal breakfast but they taste so darn good I’ll let them off.

And for lunch I’ve been cooking big batches of chilli at the weekend and then taking it into to work with me. I love cold chilli. Is that strange?

It’s always an ad hoc collection of veggies, like bell peppers, mushrooms, courgettes…anything really. And then quorn mince for protein.

I sprinkle nutritional yeast all over it and devour. Then I have a couple of Baby Bells afterwards and an apple. Really filling!

This was dinner last night. And it was sooo good. I was inspired by Meg’s recipe here.

I used 5 egg whites, half a sweet potato, sliced courgettes and mushrooms (they’re hiding) and a tbs of almond butter mixed with some almond milk to make a sauce. It’s a more healthy, but still very filling, version of pizza (I did previously try the cauliflower pizza but it took ages and this was a lot more simple).

It honestly rocked my world. I’m definitely having this again! Though you should have seen Ben’s face when he saw my dinner. *Sighs* He just doesn’t get the almond butter thing…or the sweet potato thing… Instead, I made him a tortilla pizza (safer ground for him) which he said he could “eat every single day”. I’m happy with that result!

I’ve also been using my brand new water bottle, which I love:

Moving on to fitness. I mentioned in my last post that I didn’t really enjoy my long run at the weekend. Now that I’ve changed to shorter, faster runs it’s just harder, mentally, to keep going. But at the moment I’m happy to be working on my speed and my strength training. I’m definitely seeing progress – I feel stronger, I think I look more toned. And, what I was most concerned about (and this will sound so silly), but I haven’t gained any weight. I haven’t changed my diet at all so I was concerned that by not running so much I might gain a bit of weight. But I haven’t. So I’m chuffed! Happier all round Smile

WIAW #5

Wow I can’t believe this is my fifth What I Ate Wednesday. My blog is only in its infancy and I’m still learning and working on it to make it better, but I’m proud of what I’ve done so far. It’s got a long way to go I know but I’m happy. It’s just so great to have somewhere to put the random stuff in my head! It’s very cathartic.

I love being involved in WIAW as well because you definitely feel a sense of community and it’s great to see what other blogs are out there. So thank you Jenn (over at Peas and Crayons)! I’m still grasping desperately to summer with my summery salads and fresh flavours. Just want to hold out a little bit longer!!

 

On that note of summery yumminess, I had some fun over the weekend making these really tasty pancakes. I just kept reading about pancakes everywhere and thought as a Sunday treat I’d whip up a batch of them:

I used this recipe but missed out the cinnamon (not a big fan) and then drizzled PB2 mixed with water as a sauce and served with blackberries. I managed to get three quite chunky pancakes out of this mixture. Honestly, they were to die for!

Really spongy and filling. Basically I wanted a really filling pancake that didn’t contain protein powder as I don’t have protein powder!

Lunch time I tried my hand at making falafels. I had them in salad with some chicken fried with tagine paste. They didn’t turn out amazingly I must admit. They were a bit crumbly.

However, they tasted GREAT. I’m all about chickpeas at the moment. So yummy. Really went well with the tagine spices as well.

Dinner from Monday night was AMAZING.

I coated a chicken breast in chickpea flour with paprika and cumin and then fried it in a little oil. Alongside this I made roasted veggies with a sliced peach and crumbled goat’s cheese. Holy yum! (Yay my first holy yum! Sorry, novice moment…). This was epic. Just everything about it. I’m really enjoying peaches at the moment as well. They’re so great in smoothies, salads, grilled, baked…just as a snack. A bit more messy than apples but very juicy and yummy.

Snack-wise I’ve been enjoying beasty portions of honeydew melon:

And as a bank holiday treat on Monday night, I was very naughty….

I ate A LOT of this. It was so good. And not that bad really…erm…well, it’s not Ben and Jerry’s! I love this product and all it stands for. Fairly natural (gluten free, soya free, dairy free) and her story behind it it’s really sweet (no pun intended…sorry that was lame). Well, I enjoyed my scoffing session and life’s all about a balance! Can’t be good all the time Smile

So all in all a very pleasing WIAW if I do say so myself.

In terms of fitness, as I mentioned last post, I’m enjoying my change in running. I’m not running more than 3 miles and always following it with a strength training routine. Whether that be an arm workout, a leg workout, abs or full body. I feel really invigorated with mixing it up like this. Definitely keeps me interested! I also don’t dread working out like I used to. Waking up and thinking “I’m running 2 miles or 3 miles” is a lot easier to digest than “I’m running 5 miles”, you know? I just need to think about nutrition a bit more – I’m trying to get my head around whether I should be ramping up my protein intake and when I should be eating carbs…it’s too complicated!!

WIAW #5

I haven’t posted in a while as I’ve just been rushed off my feet like crazy!

 

Anyway, as it’s What I ate Wednesday, I will stop harping on…Check out Jenn’s blog (Peas & Crayons to find out more):

My breakfast from Tuesday (prepare yourselves!) was overnight oats!! I’m so chuffed I finally managed to get on and do it. I feel a little bit more part of the healthy living blogging community. That’s a tick in that box! Did I enjoy it? Well…I did, but I did miss my lovely gooey hot green (wheatgrass) oats…But it was a nice change.

So Monday night I put about 40g of old-fashioned oats, 100g of Alpro soya yogurt, a splash of coconut milk, a tsp chia seeds and a handful of berries into a bowl (not that cool to have a jar yet…not quite that cool yet) and popped it into the fridge:

Then in the morning I grabbed it out of the fridge. It looked a little suspicious to me…

…but I gave it a stir and it was lovely a thick:

It was yummy. A nice change for once in a while I think! I did make things a lot quicker getting ready in the morning though.

My lunch was my standard salad that I take to work. This time I jazzed it up with some Brussels sprouts (which I’m loving right now) and avocado (along with my usual tuna, salad leaves, beets and tomatoes). With this I had two Babel Bells (anyone else get excited about Babel Bells because you get to peel them…? Just me?)

And dinner. Well I got a bit creative and made some hummus! And let me tell you, it rocked my world:

I used a tin of chickpeas, a tablespoon (ish) of tahini paste, lots of garlic, lemon juice and cumin. Then just whizzed it all up. Served over salad and chicken fried in a tagine paste:

It was so good (if I do say so myself). And so filling. A definite winner. I do have lots of snacks through the day but they’re fairly standard and boring (apples – obviously, a banana, and a pack of Snack a Jacks Cheese and Chive flavour – the best flavour in the world, honestly I could eat these all day long).

Maybe over kill on the salads but it is a summer staples theme of WIAW! And they’re so easy to whip up. And I do love my veggies…

Onto fitness. I’m continuing on with my new line of exercise routines. On Monday I ran only two miles (it’s still so hard to not to feel funny about not running for longer, you know? It feels like I’m copping out of exercising). But it was tough! And I was totally out of breath and dying by the end:

Only 17 mins worth of running and I was pooped! I’m keeping up the intervals and it’s tough. it really makes you focus on the run. Then I did 30 minutes of ab work. The first exercise video I found on YouTube almost killed me. So I quickly switched (yes yes I’m a wuss). It still hurt but I was actually able to complete the routine!

I’m so pleased with how things are going. I definitely feel like I’m getting stronger (possibly psychological?) But, regardless of anything else, I am enjoying it! And that, people, is the most important part of exercise I think. If you don’t enjoy it, find something else you do enjoy!

Right, this was a bit of a whirlwind post. I hope to write a longer one delving into my hen party activities… But for now, happy WIAW!!

WIAW #4 – and the beginning of a change?

Happy WIAW! Wow these things come around so quickly, don’t they?

This week I’m feeling really good. Really positive and happy. Things with the wedding are ticking along nicely. I’ve not woken up in a cold sweat worrying or struggled to get to sleep for ages. Everything seems to be in hand. Hurrah! I’ve got my hen do to look forward to [dread?] and then the weekends aren’t as jam-packed as they previously were. Whew.

It’s my fourth WIAW (my little blog is getting a bit older!).

I love being involved in this, it feels like one massive community. During my lunch breaks at work (and maybe a few times through the day sneakily if I feel my concentration waning) I love perusing other blogs that I don’t usually read or just checking out people’s food. It always makes me think I eat such boring food and I’m always inspired to change things up a bit or try a new recipe. So thank you Jenn!

Sooo…breakfast:

My porridge made with oats and hazelnut milk and a tsp of wheatgrass. It looks like sludge, I know. It’s the mix of wheatgrass and the brown hazelnut milk. Still tasted good though (I promise!).

Lunchtime (at the weekend) was a bit samey I’m sorry, but I’m really enjoying my salads right now (*desperately clings on to the last dregs of our British summer*):

Chicken fried in a Moroccan spice blend, mozzarella, cashew nuts sliced pear, beets, tomatoes, cucumber and leaves. Whew! Quite a variety I guess. I love meals like that though where you just bung everything in them. It’s great that every forkful is slightly different. [Although Ben, the strange guy that he is, leaves all his mozzarella to the end – apparently he likes to get through the ‘boring’ healthy stuff and leave the good stuff until the end *sighs*]

And dinner last night was my favourite meal of the week.

In comparison to lunch, this is obviously a lot less varied. However, I love love this meal right now. Crunchy no-added sugar peanut butter, sweet potato, Brussels sprouts and broad beans. Usually I have carrots alongside this but I forgot. I was a little bit devastated when I sat down and realised my mistake. I almost ran back to the kitchen in a deranged panic. But then calmed myself down and convinced myself it was fine without. But carrots and sweet potato are a match made in heaven… Sad smile

Snack-wise I have been loving my smoothies (still).

I take my green monster smoothie to work with me and drink it surreptitiously, hoping no one will see. Though sometimes when I make the smoothie too thick it’s really hard to sneakily drink it. It has the consistency of sludge, meaning I have to tilt back my head so far to drink the damn thing…It’s cool, no one’s noticed. All is fine. *Looks round furtively*

And in the evening I’ve been experimenting with different chocolatey-style smoothies:

This one contained a handful of frozen berries, 100g (1/2 cup) of Alpro Soya yogurt, 1tbs P2B and 1 tsp carob powder and a little splash of hazelnut milk.

I ate it straight out of my blender container to save washing up (yep, presentation score of 10/10). Yum! I always need a snack in the evening. Even if I’m not hungry (a cardinal sin, I know). I just have to have something. I can’t bare to think that dinner is my last meal before breakfast (that’s hours away!! I’ll die of starvation in my sleep!)

And for fitness side of things. My usual running.

I love running (you might have guessed) but I’ve started to have a think. Nothing dramatic as of yet, but I’ve been reading quite a few blogs and the benefits of doing more strength training. I enjoy using weights as you really feel the burn the next day. The thought of reducing my running down makes me nervous (I’ve always done something cardio-based) and I couldn’t not run. I love the feeling, the effort of pushing yourself (OK maybe I enjoy that afterwards) and the feeling of accomplishment at the end of a long run. But something keeps niggling me at the back of my mind that running isn’t everything. Reading Meg’s blog and Sara’s blog and hearing them reap the benefits just makes me think. I’m a fairly healthy person, I’m a fairly fit person, but I (like all girls) I know there are some improvements I could make (call me a perfectionist, I know). A bit more toning maybe. And running just doesn’t seem to help. My thoughts are all over the place at the moment, but I’m starting to wonder if I should give it a one week trial of doing less running and more weight training…

Oh I’m in such a quandary! Any advice would be much appreciated!!
