Merry Christmas??

Brrrrr it is cold! Though it’s actually quite nice in a weird way. To be snuggled up inside nice and warm and for it to be chilly outside. Though getting out of bed in the morning is not fun – nor is taking Alfie out for a walk first thing. Winter coat: check, Uggs: check, gloves: check. Result = a happy Alfie but a cold Anna.

And Christmas seems to have suddenly appeared out of nowhere. One minute we’re all vigorously carving our pumpkins and admiring the autumnal colours of the trees when suddenly, boom! hello tinsel, hello Christmas adverts on the telly! Now don’t get me wrong, I love Christmas so as far as I’m concerned this is brilliant. HOWEVER, I have now been thrown into a state of stress. When am I going to bake our Christmas cake? When will I have time to go shopping? What do my friends and family even want??

And breathe. Anna, it’s the beginning of November. But I am getting excited. I love Christmas. I love the food (who doesn’t?), I love how everyone is just more merry than normal, I love the Christmas decorations, the time with the family…the never ending boxes of Celebration chocolates (I don’t love that Supermarkets seem to think that they’ve put them on offer at the moment…erm, weren’t they always that expensive??) It’s without doubt my favourite time of year. So the sooner the better! Smile

As usual as it’s Wednesday it’s WIAW. A big thanks to Jenn for hosting this as usual. I’ll show you a selection of different meals from the week as my best eats were spread rather than an individual day if that’s alright!

 

Breakfast: OK, OK you’ve seen pancakes a fair few times now if you’ve been reading my blog for some time…before you fall asleep, I did try a new topping to jazz things up a bit (and use some of the mass of fruit I have sitting in our freezer…)

As it was too difficult for me to work out how to defrost my pumpkin purée from the freezer (yep I’m that person) I decided just to stick with the standard recipe I use (find it HERE). The topping I decided to just have fun with.

I thawed some frozen blackberries, then sprinkled them with quite a generous amount of cinnamon and a few drops of Stevia. Then I zapped it in the microwave for maybe a minute. Basically so the fruit turns a bit mushy and is warm. Then I poured it over the pancakes. Bliss!

Lunch: During the week I always take food with me to save on costs. I used to have chilli using Quorn mince but I’ve gone off that mince a bit now and much prefer using mixed beans.

I used a yellow bell pepper, onion, courgette, mushrooms, chopped tomatoes and mixed beans (like butterbeans, kidney beans, chickpeas, etc.). I also added chilli powder, paprika, cumin, a little bit of sugar and some mixed herbs. To spruce it up I added a large tablespoon of Philadelphia cheese. This made it so creamy and delicious – definitely adding this again! Along with this for lunch I have two Baby Bells and an apple. Maybe not the prettiest lunch, but it works for me!

I’ve set myself a little target for November to make a new recipe every week as I was finding myself in a bit of a food rut. You know what’s it like…getting in from work, being tired, you don’t want to whizz up some all singing and dancing dinner. But I’m pushing myself to try – at least on Friday and Saturday nights! So far this is going really well. I made coq au vin the other day and that was deeeelicious. But I also made another meal this week as well. And I probably say this about everything I cook I cook but it was such a good meal! Filling and sneakily nutritious.

I used THIS recipe. Basically it’s chicken coated in a ground almond coating and then baked in the oven. Crunchy and spicy!

And alongside that I cooked some cauliflower and then mashed it with some mozzarella cheese (well I blended it with a hand-blender).

I LOVED this. Seriously easy and a good alternative to mash potato if you fancy a lighter dinner. With all the ground almonds and chicken, this was a very filling dinner.

Snacks: I sponsored Maria for her Great North Run a while back and she very kindly sent me some baked goods (Swedish Apple Muffins) as a thank you. How sweet is that?? (Due to me going on my honeymoon she sent them to me now – I’m very chuffed):

So I have been happily tucking into these this week. They are so moist and yummy. Perfect evening snack. I thoroughly recommend Maria’s blog, she always has such yummy recipes and ideas!

Fitness: I’m still following my strength routines three times a week. It’s not quite as difficult as it was originally so I feel I’m making some progress. I’ve got my plank back to 3 minutes. Does anyone else get bored doing the plank? I mean, it’s tough and painful but so boring. I just end up staring at my stopwatch…

I’m thinking of getting a resistance band – has anyone tried this? Is it worth it?

Running is going well. The only problem I have at the moment is that now I’m running at work it means that if I have a busy day I can’t always run. I’m quite a structure, routine person (have you noticed??) so I find this really frustrating. I hate pushing workouts to a different day. But it’s one of those things I guess.

Pumpkin oatmeal spice cookies

Wow the week has gone quickly. I must say this all the time but seriously. This week has been fairly tough. We’re working on the customer site at the moment and this adds an extra 30 mins on to my already one hour commute. And it’s half term at the moment which means traffic is amazing. Next week is just going to be terrible. I’m here for another five weeks!!

Right, moan over. As I said in my last post I had meant to post on Monday but it just didn’t happen. Sleep was chosen instead. Sorry I’m not sorry.

I wanted to do a quick mention of the mammoth task that was cooking my pumpkin. I was devastated when I’d used up my one and only tin of pumpkin puree that I’d got from America on my honeymoon. I almost bought a million a few more tins but decided I should try making my own.

OK I realise pumpkin might be a bit old news now as Halloween is over and October is finished but this was quite an arduous process and I just want to at least document it as, honestly, a fair amount of effort went into it and I’m chuffed at my achievement (yes, achievement). I followed THESE instructions. In the end I got a hefty amount of pumpkin puree, and I saved a quarter for roasting, and got a handful of pumpkin seeds. Fabulous. Stocked up for a few years at least!

So I’ve been using pumpkin everywhere as you can imagine. I wanted to make some relatively healthy pumpkin cookies for Halloween and this recipe was really quite easy.

Pumpkin oatmeal spice cookies (recipe adapted from HERE)

  • 1 cup pumpkin puree
  • 2 eggs
  • 1 1/2 cups flour (you could use whole wheat here I guess but I only had normal white flour) 
  • 3 cups of rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup white sugar (I actually subbed this for Stevia and went on taste just to make it a bit healthier)
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 tsp cinnamon 
  • 2 tsp pumpkin pie spice

– Preheat your oven to 350 degrees F.

– Combine pumpkin, eggs and vanilla until well combined. In a separate bowl, add flour, oats, sugar/Stevia, baking powder, baking soda and spices. Combine wet and dry ingredients until mixed. The dough is very thick and fairly dry, I added a few splashes of almond milk.

– Drop onto a greased baking sheet. I did 18 fairly chunky cookies, though you could easily make them smaller to make more. Bake for 12-15 minutes until lightly browned.

They were crunchy on the outside and soft in the middle. Lovely! You could probably add chocolate chips or nuts in there as well but I wanted to keep things simple.

I also threw some roasted pumpkin to a feta salad. This was great. I love salads with hot ingredients.

I’ve got to say, I didn’t notice any difference apart from it being slightly more creamy. I’m a big fan of more stodgy porridge/oatmeal so this didn’t blow me away if I’m honest. But some extra nutrients in the morning is always good I guess!

This weekend we have nothing planned. Hurrah! So I’m hoping to get a long run in tomorrow morning (we’ll see) and the usual chores. We’re loving Grey’s Anatomy (season 6) at the moment so Saturday night will probably be a fair few episodes of that with maybe a cheeky gin & tonic. Bliss.

Honeymoon–Part 2 (Colorado)

Hi guys! If you missed the first part of my recent honeymoon, please go have a read. It was a great week in Orlando Smile Now to carry on to part two…

After Orlando, we caught a flight to Houston (random I know) and then to Colorado Springs. We spent enough time in Houston airport to need to grab some lunch. We went to Cat Cora’s Kitchen. It was very good – sweet potato fries, where have you been all my life?

And after checking out every single damn shop in Houston airport while we waited (for FOUR hours) we caught our fight to Colorado Springs.

For our first day we decided to go horse riding in Garden of the Gods. We felt very cowboy-esque. My horse was super speedy, while Ben’s took his sweet time.

It was an amazing day! And baking hot! I thought it’d be cold but it was so warm. It was so much fun horse riding through this beautiful scenery. Such a difference from Orlando!

We also went mountain biking twice as well. The first time it was still so hot. I got badly sunburnt (whoops). We cycled some crazy routes through the Red Rock Canyon for about 2.5 hours. We were shattered.IMG_3020

It was quite scary at times but definitely exhilarating. We had to get off the bikes at times and walk because it got a bit precarious. I could just hear my mother’s voice in my ear telling me to go back to safety…

And the second day of biking it was freezing. It was crazy hot one day and then the temperature dropped so quickly.IMG_3133

We cycled to keep warm! We saw an elk as we were cycling along as well which was really cool. We were one with nature…careening through the wilderness.

We were intending on driving up Pikes Peaks (the main peak in Colorado) but it would have taken two hours apparently to drive it and so this is why we decided to do the biking again as we enjoyed it so much

And we did lots of walking. It was just so beautiful. Towards the end of our time there it just got so cold it was unbelievable. Really biting wind.

We made a road trip out to the Royal Gorge Bridge as well one day. Absolute fantastic views. Though pretty much everything was closed – apparently out of season. No white-water rafting for us! We were sad but it was so cold we were quite relieved. RG Bridge

Food-wise was a culinary delight in Colorado. IHOP for breakfast every day, yes please!IHOP

I’d like to point out that the left-hand side are mine and the right are Ben. Don’t get me wrong, pancakes and sweet things like that are yummy for breakfast but all that cream and sauce…my stomach just turns.

The meals in Colorado were really good. For lunch one day we went to a Black-Eyed Pea for something a bit more relaxed and ‘lunchy’. I got a turkey meal with two added vegetable sides (my kinda sides!)

It looks like a crazy roast dinner! And a little portion of cranberry sauce on the side. I think the bready thing in the corner was cornbread. It didn’t taste very healthy but it was very good!

For dinner one night we went to a Mexican restaurant and, unsurprisingly, the meal was HUGE, but very yummy.

I didn’t even make a stab at the tortilla. Poor effort maybe, but I think I did pretty well!

I’ve shown quite a few of the meals I’ve had on the honeymoon and most of them probably weren’t that healthy (hello, turkey leg). But I think it’s important to relax a bit on holiday and try things you might not have normally. We were fairly active and we didn’t go absolutely mad so I think the ‘damage’ is fairly minimal. My jeans still fit and that’s all that matters! I can’t be one of those people who goes on holiday and worries and frets and not enjoy myself. I know I eat healthily at home and I exercise so I knew when I got home things would balance out. That’s not to say that if Pinkberry became available in Southampton I wouldn’t have it every day week…

Other than lots more sight-seeing, walking, eating and just having fun, that’s pretty much it! And the perfect end to the holiday was on the flight home:

Holiday best eats

Happy Wednesday! Are we there already? I don’t know why but I feel in quite a happy place.

I like being back in my routine as well. Sad I know but that’s me I guess!

So for this WIAW I thought I’d do a What I ate Wednesday on our holiday that I really enjoyed (and mourn over not being able to have any more). [Check out Jenn’s blog for more info on WIAW!]

Breakfast: Though I love my porridge, IHOP breakfasts in Colorado were amazing. We went there every day for breakfast. The staff were so friendly and lovely. After the first day of us saying we were on our honeymoon they remembered us and asked each day what we were up to and divulged some inside tips.

Most mornings I’d have whole-wheat toast, scrambled egg, turkey bacon and fruit. Obviously with the amazingness that is sugar-free syrup.

But then on a day when I knew we wouldn’t be having lunch until a lot later, I went for something a bit more extravagant.

Waffles with blueberries!! Oh these were so good. I want a waffle-maker now. I don’t care that we don’t have the space in our teeny tiny kitchen. I want one.

So breakfast was pretty damn tasty. And refills on coffee. Heaven. Now, I think it’s only right that I share what Ben ate as well…purely for comparison purposes…

For lunch one day we went to a great Mediterranean restaurant (also in Colorado) called Café Caspian. Normally once a day we’d have a big meal where we’d have a starter and a main and usually that was dinner, but when we checked the menu out we knew we just had to have the sharing meze platter to start.

Honestly, this was epic. Hummus, sundried tomatoes, vine leaves stuffed with some crazily yummy rice concoction, olives, falafels… The only problem was that it was huge and I still had a main course to go. So we had to be selective and couldn’t possibly eat it all. So good though.

Then for main I’d gone for a salad (which after that beast of a starter I was quite relieved).

But still it was a monster! Avocado, chicken, feta, almonds, olives…all my protein in one meal basically. Honestly, I wish I could eat this every day.

Dinner: But the absolute best place we ate was in Orlando – so good we went there twice. Seasons 52.

When they seated us they asked us where we were from because of our accents and if it was a special occasion. We said it was our honeymoon. Then the waiter brought us champagne!!

So lovely (notice how quickly Ben’s disappeared haha). And the menu was fantastic. I literally could have had anything off of it. The specials change every week due to the changing seasons (hence the name), which is brilliant! For starter I had a chicken skewer with apple slaw:

It was huge though – honestly, is that a starter?? I was full when I’d finished that (too good to leave any).

For main I’d chosen a vegetarian selection platter:

How amazing does that look? There were roasted sprouts, a stuffed pepper, marinated tofu, roasted butternut squash, a wholemeal tortilla with black beans and guacamole…etc. Presentation alone ranks this high up on my list of amazing dinners. I almost (almost) regretted having a starter. I tried to eat as much of everything as I could but I’m sad to say I couldn’t eat it all – honestly, I’d give a prize to anyone who could eat both that starter and the main with no issues!

And how can you say no to pudding when the waiter brings out a selection tray to show you, despite saying “Oh no I’m waaay too full”??

And they’re only ever so tiny… This delectable delight was pumpkin pie with a ginger snap crust. Perfectly in season, wouldn’t you agree?

Needless to say I was STUFFED. Alongside my meal I’d decided to treat myself to a cocktail (because I had all that spare space to fill, you know). I went for a Superfruit Martini (Veev Açai Spirit, Pom pomegranate-blueberry juice with organic agave nectar). Seriously, that sounds like an Anna drink.

The waiter even left the cocktail shaker for me to top it up with the ‘left-overs’. I was so excited. I took a sip and almost died. I have literally never tasted anything worse in my life. It was like nail polish remover. I tried to get Ben to drink it but even he wouldn’t have it. I started to panic. The waiter had made such a song and dance about it and I had acted so excited. I just couldn’t drink it though. I thought about pouring it inconspicuously into my water but Ben forbade me (yep, forbade). So after panicking and faffing I thought I’d just tell the waiter it wasn’t my thing and apologise (I know this sounds ridiculous but the waiter had just been so lovely the whole night and was so pleased with my selection). Anyway while I was faffing, the waiter popped over quickly and said “How’s the cocktail?” and I just automatically said “Oh yes it’s lovely, thank you.” Ben just stared at me as if I’d gone mad. “Well there goes your plan”. Damn.

Well in the end I decided just to leave it and SAY NOTHING. I’m such a numpty! Looking back it’s funny now how much I panicked. The waiter probably wouldn’t have cared. But I didn’t want to look like an idiot and also have the risk of him saying he’d take it off the bill and get in trouble or something. It was my foolish mistake for choosing a martini. It’s not like it was going to taste like a smoothie, duh Anna.

So as you can see, the honeymoon was filled with massive amounts of food so many yummy foods. It’s definitely given me some inspiration to make some crazy recipes. Also made me realise I have irrational urge to eat waffles. All. The. Time. That’s normal right?

Fitness-wise…it’s been tough, I’m not gonna lie. 5.30am is not an Anna-friendly time to get up and run after being on a break for two weeks – though I haven’t slacked. But I have some plans on jazzing things up a bit so stay-tuned for a post coming up where I go into a bit more detail (including my up and coming half-marathon training plan).

Holiday –part 1 (Orlando)

Hi guys! Well, I’m back to 100% Anna now. Back into the groove of work. It’s quite nice to have nothing to worry about or stress about. No more mad planning and just free weekends! It’s novel. I can get back on track with things that slid to one side this year. Like sprucing up our little home a bit as since we moved in last November we didn’t majorly deck it out with any sort of decorations. I’d like to buy some pictures and things like that to make things a bit more homey. Oh and Alfie is in a definite need of a haircut! He’s a mess.

So, I thought I’d do a recap of our holiday adventures. We spent six days in Orlando and then four days in Colorado Springs. So, here’s how Orlando went:

The taxi picked us up at 4.45am. We were half asleep as you can imagine. But by the time we got to the airport it was breakfast time (5am was breakfast time my tummy was telling me, but I waited). We treated ourselves to a Jamie Oliver breakfast:

Check that bad boy out. Not my usual porridge – but it’s Jamie’s so what can I say! I don’t eat sausage though (worst food in any form) so Ben gladly traded it for his black pudding. Yum.

Anyway, after a very very long flight we arrived in Orlando. Groggy and tired we basically just went to bed (in our amazing three bedroom villa!) It worked out nicely because we’d gone to bed so early (Orlando time) we woke up the next day at like 5.30am and so got started straight away. To save money and time, we decided to buy a load of food from the supermarket and eat breakfast at home before dashing to a theme park (also I’m a bit sad and get very excited with foreign supermarkets so it was a win-win situation).

Obviously I had porridge. American style! (Actually not that different from UK…) And Ben had a crazy array of cereals each day:

Each day we zoomed off to the parks. We went to Universal Studios and Island of Adventures first.

It was brilliant. It was fairly quiet so we got on rides very quickly. We were like kids running around with big smiles on our faces. Obviously we had to go to Jurassic Park (my all-time favourite movie – despite being terrified of velociraptors for the majority of my childhood).

Where we shared a BUTTERBEER!!! Pretty much heaven in a drink. I dare not to think of how bad it is for you but seriously, I need this in my life on a weekly basis:

Hello candy-coated apples! Of simply every variety. Cue Ben holding Anna back before she spends all their money on teeth-rotting goodies. The chocolate/marshmallow/caramel/peanut butter coated apples are healthy though, right? There’s fruit in there somewhere…

For lunch we decided that it was just too hot to buy something from a vendor and sit outside eating. We went to a great restaurant (twice) on the City Walk: Emeril’s Restaurant.

After two days of Universal, we then went to Disney. In complete juxtaposition to Universal it was so busy! We were surprised as it’s supposed to be the quiet season right? But maybe there is no quiet time for Disney…

We went to Hollywood Studios in the morning and then headed to Magical Kingdom for the afternoon. We got there around lunchtime and it was packed. We decided to try finding a restaurant to eat (=cooler). Epic fail.

Now, withhold your judgement please… Throughout the parks I’d been seeing people eat HUGE turkey legs. Now I’m not a massive meat eater but I had begun craving one of these bad boys to an irrational level. I just had to have one.

I’ll spare you the pictures because, people, it wasn’t pretty (good ol’ husband snapping away while I tried not to look like a savage). Despite lacking a lot of feminine grace while gnawing away on the beast, it tasted AMAZING. Out of idle curiosity I later Googled it. 1,200 CALORIES. I was aghast. Ben laughed. But what can you do? No wonder it tasted so damn good.

Disney wasn’t as good as we thought to be honest. A lot of children. A lot of Disney-obsessed people. We enjoyed it, but it didn’t rock our world like Universal.

The next day was spent in Busch Gardens which was EMPTY. We went on everything and even got on the front of the roller coasters quite a lot. It was good fun. Lots of animals as well!

We grabbed lunch while watching some crazy dancing in one of the indoor canteens. On a similar carnivorous note to before I went for ribs with a side of veggies. Ribs are a bit of my devil food. I LOVE them but I try not to eat them too often as they’re usually always coated in that delicious BBQ sauce which probably has about 5 tbs of sugar in it. But hey, it’s holiday, and they were the speciality. Would be rude not to…

We did manage some slightly less rich food by eating in the villa (and saving us some money) and trying out some more local restaurants and enjoying their salads.

Though it was verrrry chilly. But nice and refreshing after all the humidity and heat.

We spent one day away from the main tourist area and looked around Winter Park which is a very beautiful area with nice eating spots and coffee shops. It was nice to take a moment out!

All in all, Orlando was amazing. We went on every ride we wanted to (some twice) and really had a great time. Having the villa was brilliant as we could just come back and have something simple to eat at home or swim in our private pool! It definitely saved us some money as well.

So, part two will be on our adventures in Colorado. Horse riding, bike riding and lots of mountains!
