Chicken and chocolate

Well I am glad we’ve almost finished this week. It has definitely been a strange one! What with it being Easter and having Monday off, and then having Tuesday off because of my little episode (thank you all for your kind words by the way), it’s just been a bit crazy.

After Tuesday I felt a bit battered and bruised with a HUGE head ache, but otherwise I was OK. On a random note, when I had an ECG in the ambulance to check my heart they stuck these coin-sized sticker things (the things they attach the wires to to read your heart…or something *pretends to sound like she knows what she’s talking about*) on various places on my body. When I got back from the hospital I kept finding the stickers. I had no idea they put so many on me! When I thought I got them all I then found them on my legs! Crazy. And painful to unstick.

I’m now terrified to get up in the morning (or the middle of the night for my various pee trips, sorry TMI) for fear I may faint again. I’m like an old lady getting up in the morning, bracing myself and taking my time.

I went into work on Wednesday because the doctors told me I couldn’t be alone for the next 24 hours in case I fainted again and Ben couldn’t be off work again. But in all honestly, I was fine. And it was rather fun telling people what happened. I know that hospitals are not funny places and God forbid anyone needs to go there, but thankfully my episode was just sheer bad luck of the location of our stairs and nothing serious. If I’d have fainted on the bed I’d have been fine!

Anyway, so I wanted to recap a bit more of Easter (before I was rudely interrupted by my delicate disposition). After looking after Ellie, my niece, on Saturday Ben and I were definitely up for a more relaxed day. Our families had agreed to have a bit more of a quiet Easter and most of us aren’t religious, so Ben and me decided to have a nice relaxed meal on Sunday.

After inspiration from Sara and her Bucket List of recipes I decided to do what I’ve been meaning to do for ages. Roast my first ever whole chicken. I decided to keep things relatively simple so just put some Nando’s mild sauce on and under the skin, pop an onion and some garlic inside it and season before popping in the oven for an hour and a half.

I bought a whole brand new baking tray for this culinary adventure only to find I could cook it in it’s foil container *sighs*. But I’ve got it for next time!

We kept the meal simple as we wanted to maximise the chicken experience (…or I couldn’t be bothered to do all the trimmings).

I had broad beans (the king of all vegetables in my humble opinion), roasted vegetables and mashed cauliflower cheese. Ben declined the cauliflower and had potato waffles instead. Honestly I can’t get this boy away from cheese but if it’s near cauliflower he’s like “helllll no”.

I’m not ashamed to admit that I went back for thirds seconds of the chicken. It was so good.

And I was inspired by another blogger (I know, seriously I have no independent ideas) for using the chicken carcass to make stock. Laura always talks about the pros of respecting the meat you eat by using as much of it as you can and the health benefits involved in bone broth that I was really chuffed to finally try it myself. I felt like a proper housewife with my stock simmering away in the pot. It’s now safely stowed away in the freezer ready to be used in soups or sauces. Yum.

Then mums also popped over on Sunday and we had a nice catch up and coffee with them both. I only wanted one Easter Egg this year because honestly we have so much chocolate in the house it’s ridiculous, so my mum got me this AMAZING egg.

A dark chocolate egg with TWENTY-FOUR mini bars. There are loads of flavours like chocolate and almond, chocolate and raisin, white chocolate… Oh I am loving this. I might have eaten the entire egg in one sitting while watching Downton Abbey in the evening with these two dashing chaps…

…and felt very sick. But I find it so hard with Easter eggs because you keep wanting to ‘tidy up’ an edge and then suddenly you’re just left with a few chunks…and well, you can’t leave them…

Monday started with a 6 mile run:

That mile 5 was TOUGH. I had spotted another runner a distance ahead of me at mile three and I gradually began to gain on him. But he was clearly running just that tiny bit slower than me because it took forever to get to him. Then around mile 4-5 it became a bit uncomfortable because I was right at his heels and I didn’t want to be like a weird runner stalker. So I had to pick up my pace to get past him and then maintain that pace to make sure he didn’t feel like a weird runner stalker to me. Hence my 7.14min/mile pace for mile 5!

And then the rest of Monday was a day of chilling. I might have hoovered to liven things up, but otherwise we just relaxed. I spent some really nice lazy time on the couch watching more Downton Abbey and reading magazines…

I know my Easter weekend might not sound very exciting, but honestly, it was perfect. I got to spend it with the people I love and enjoy good food. What else could I want?

Easter weekend

First and foremost, four day weekends are amazing. It was so lovely waking up on Friday knowing that I had three more lie-ins ahead of me. Bliss.

This Easter we kept it quite low-key and very relaxed. A perfect way to spend the time if you ask me! Thursday night we had a nice easy dinner which was inspired by Maria from Running Cupcake. I really fancied something warming, like soup, but also wanted something a bit more carby so this fitted perfectly. Home-made tomato soup with a chicken quesadilla.

The soup was ever so simple. Just a tin of cherry tomatoes (for soups this is perfect because they’re slightly sweeter than ordinary chopped tomatoes), some vegetable stock, a chopped small onion, herbs (like basil & thyme) and a tiny bit of sugar. I blitz it with a hand blender at the end but left it a bit ‘lumpy’ as I wanted a bit of texture to it rather than it to be completely smooth.

The quesadilla was just filled with chopped chicken, onion, mushrooms and zucchini that I’d fried with some spices (e.g. paprika & cumin) and garlic. I spread a fair amount of cream cheese on each tortilla and then popped one onto a frying pan, loaded it with the mixture and popped the other tortilla on top and fried, and then cooked the top under the grill.

On Friday I got all the housework done and dusted (pun intended). As sad as it sounds I like to get the house in order before anything else because then you can really chill knowing that the bulk of the jobs are done. To be honest, we didn’t do much else. We watched the last of Game of Thrones and had pizza for dinner. Perfect.

Saturday morning I went for my long run (10 miles).

To be honest it felt very tough and I felt very tired the majority of the time. But I’m glad I went. I love getting back from a long run and just feeling like I’ve accomplished something really great. In the great scheme of things of course I haven’t, but I just feel on top of the world and ready for anything.

And believe me, I needed to be ready for anything. Ben and me were going to help out my sister and brother-in-law by looking after Ellie, our niece. After my run I showered, ate, and we picked Ellie up to take her back to ours for an afternoon of fun.

Now, let me explain something first. I am not very good with babies/children. I freak out and have no idea what to do with them, how to speak with them, or anything really. So this was a HUGE step. Of course I’ve been around Ellie (who is just over three years old) loads of times, but never just Ben and me. Alone. No actual adults. So to say I was nervous was an understatement.

In my mind I had planned out the day in a regimented format and imagined we would drift from one planned event to another with gentle ease. Yes, I realise now how delusional and naive I was.

We had a day planned of an egg hunt, building towers with some blocks, colouring and episodes of Dora the Explorer. However, pretty much only the egg hunt happened. We had smallish eggs and one big egg hidden all over the house and it was really fun to watch her try to find them. I thought we’d put them in really obvious places but she still needed some hints from us, bless her.

After that she wanted to feed the eggs to Alfie. Quick intervention (much to Alfie’s disappointment) and all was well again. Then it was a whirlwind time of starting to do one thing and quickly wanting to do something else. I’d like to say organised chaos…but just chaos covers it. We started watching a film (Land Before time One million and Three IV) and I was getting quite into it when she decided nope she didn’t want to do that anymore.

For lunch I made some egg mayonnaise sandwiches which in retrospect was probably a mistake (thank you, Nick, oh kind brother-in-law, to suggest such a meal). There was egg and mayo EVERYWHERE. I had to leave the room. It broke my soul.

As much as it sounds like it was a stressful time, we really had fun. It wasn’t at all like I had planned. But of course, you can’t plan things with a three year old. You just have to go with the flow.

My parents showed up to rescue help us and we all went to Manor farm, a local park and farm, to see some animals and have a nice walk.

It was freezing but it was great to see all the animals – especially the baby animals.

I couldn’t get over the turkey though. It was HUGE and, honestly, it wasn’t winning any beauty contests (no offence, turkey). And Ellie saying “Christmas dinner” to him probably didn’t make him feel any better… Confused smile

We had a lovely cup of tea to warm us up and then parted ways. When Ben and I got home (Ellie-less) we realised how shattered we were. Kudos to anyone who has kids!

Right, I think I will leave it there! I have a few more adventures to recap but I will save them for the next post as this post is far too long as it is. Gold stars for anyone who read down this far Winking smile

What I Ate Skiing

Happy Wednesday! Well, I am fully back into the groove of work after my holiday (if you missed my recap of my skiing adventures, check it out HERE).

As much as I love going on holiday and getting away from it all, it is so good to be back in my own home and comforts with my regular food. That might sound boring, but I love our home and our usual routines.

As it’s WIAW, I thought I’d do a What I ate Skiing post.

I mentioned in my last post that the food in Bulgaria didn’t rock my world. Don’t get me wrong, I fully enjoyed skiing and the whole experience of it, but honestly the food at our hotel sucked. We went half-board so got breakfast and dinner. On the first morning we went down to breakfast and it was a small buffet of strange fried meats, fried bread, really dodgy looking yogurt, cold meats and salad. Yes, salad.

Now I don’t want to offend any Bulgarians, but it really wasn’t me. I didn’t know what the meat was and it all looked very sausage-like, which I am not a fan of so I tried to play it safe.

I had a piece of toast, two boiled eggs, some ham (I think?), jam and fruit and salad. Very strange combination I know but I wanted to make sure I had enough fuel for skiing later. Basically I was making the best of a not great situation. Maybe I’m really fussy but Ben wasn’t liking it either.

To be honest, the whole breakfast experience felt very canteen-like with people rushing around grabbing food and piling their plates high. I much prefer a calming morning and slowly enjoying my breakfast. This was not fun. What also irked me was that breakfast started at 7.30am, and as Ben and me wanted to get up and get out skiing asap we’d get to the breakfast room pretty much dead on. One morning we were TWO MINUTES early and the waiter looked at his watch, looked at us and then shut the door IN OUR FACES without saying anything. I mean, seriously, how rude is that? As I said in the last post, the hotel was shocking (food, rooms, customer service) so at this point we weren’t surprised.

One morning I was overjoyed to find muesli. You better believe I enjoyed a big bowl of this!

But it ran out the next day and obviously they didn’t re-stock *sighs*. So breakfast was a bit of a dud if I’m honest. The first morning back from holiday I practically danced my way to kitchen to make my oatmeal. I am that cool.

Lunchtime on the first day wasn’t amazing either (sorry I know this is so whiney). It was all fast food meats and chips. Meat that was vaguely “beef” or “pork” which you just ordered on it’s own and then could order slices of bread or greasy chips. Not fancying this every day Ben and me decided to hit the local supermarket and make our own lunch to take with us. Not only was this cheaper but it meant we could have a tasty lunch in the snow away from the hubbub.

I had a ham sandwich, some stolen cucumber from breakfast, an un-pictured Babybel (they had Babybels!!) and an apple. Oh and I stole some of Ben’s crisps each day.

IMG_3704It was great eating lunch sat in the sun on the snow. I’d have a diet coke and Ben would have a beer and we’d poke them into the snow to keep them nice and cold. Perfect!

We also treated ourselves to a more extravagant lunch one day at the more posh restaurant (you had to book). It was in this beautiful cabin with a lovely warm fire. They even offered us slippers to wear if we wanted to take our snow boots off!

IMG_3672 As we only had an hour to eat, we kept to just a main course. I had a pork chop with lentils.

This was so good. The pork just melted in my mouth and the lentils were cooked to perfection. They also had warm bread on the side so we could fuel ourselves fully for the day. We thought it would be really expensive but actually it was surprisingly cheap (more expensive than buying the cheaper food elsewhere, but for a good meal out very reasonable).

Dinner *sighs*. Well I didn’t even take any photos of the hotel dinners because honestly it wasn’t worth it. When I asked the waiter/chef what one of soups was that was on the buffet table he shrugged like he couldn’t care less, picked up a spoon and swilled it around a bit and said “Um, not sure. It has beans in it.” Ah right. Thanks but no thanks. After a night of dodging some really suspicious bullets (seriously, all crazy processed meats floating in thick sauces and no vegetables), Ben and me decided to have dinner out each night. Best decision ever.

We went to a small, cosy tavern with some very friendly owners.

So rustic! We got a salad to start. Now Bulgarians know their salads that’s for certain. The list of different salads was quite extensive! We went for a standard Bulgarian classic.

Lots of vegetables and big chunks of feta cheese with a basil dressing. Even Ben loved this!

For the main, I had sea bass with grilled vegetables. The funniest thing was when I was ordering the fish the waiter asked if I wanted chips with it and I said no could I get the grilled vegetables and he looked at me oddly and went “Erm, no. You’re having vegetables to start.” I really had to force my point that, yes, I wanted vegetables AGAIN with my main. He seemed bewildered. Quite amusing. Clearly he hasn’t met an Anna before.

So good and so nice after the horrible dinner the night before.

Another night we tried somewhere else and, again, I ordered salad to start.IMG_3754

This is a really bad photo sorry, but basically it’s lots of salad, the feta cheese (which seems to be a Bulgarian speciality), roasted mushrooms, and beans in a tomato sauce. Very yummy. Ben ordered goat’s cheese roasted in honey.

Oh my goodness, this was the best tasting goat’s cheese in the world. Fact. I managed to snag a few pieces before it was gone in a blink of an eye.

For main I went for a Bulgarian chicken shashlik. This was basically chunks of chicken cooked on an outside BBQ with vegetables on a skewer. They brought it out on a huge wooden board and then removed the meat for me.

Honestly, this might not look that huge but the pieces of chicken were massive. I was absolutely full to my brim after this. As yummy as it was it was a bit overkill on the amount of chicken!

We didn’t snack much at all during the day because we were skiing all the time. We did however enjoy some après ski drinks.

Ben enjoyed a beer while I had a pear cider. So lovely sat in a warm bar while watching the skiers and drinking.

We also had some hot red white with fruit in the evening.

This was lovely and warming. There were bits of orange in the drink which added a lovely flavour.

We also went to a little sweet shop in the nearby village (how could I not??)

We went in to have a browse around and it became very clear we needed to buy something as the man was looking at us so expectantly. It looked like a pic ‘n’ mix so I thought we could help ourselves, but he took charge and I had to point at the sweets I wanted which meant he put HUGE amounts in our bag. It wasn’t expensive and we told him to keep the change so he threw in even MORE. We now have like a life-time supply of candied and chocolate covered nuts. Well, it was great to snack on those in the evening!!

And there was soo much Milka about.

So though the food didn’t hugely appeal to me in the hotel – breakfast was such a disappointment every morning and dinner just not our thing at all – we managed to find ways to ‘cope’. That was the downside of the holiday that food wasn’t particularly easy like it was on our honeymoon holiday in that we had to really search for good stuff. But in the end we were there to ski!

My Skiing Adventures

Hi guys! Sorry for my lack of posts, we are now back from our week of skiing in Bulgaria. We got back late Saturday night (2am UK time, 4am Bulgarian time – which was the time that our bodies were still in) so we were quite tired!! So I’d thought I’d do a recap post to tell you all about it if you don’t mind Smile

The taxi picked us up from our house 11ish so I had enough time to get up early to get in one last run before having a week off. Yes, I know, sounds a bit obsessive but I thought if I was just sat travelling all day it would be nice to think I got a run in the morning! So I ran my first ever 12 miles and was fairly chuffed with my speed.

It was quite a tough run, I’m not going to lie. By mile 8 I was feeling fairly tired. But I got there in the end about 8 minute a mile. This is the speed I’m planning for the half marathon and I know shouldn’t be running this speed already on my long runs but it just came naturally to me so I’m thinking I might aim to go quicker on race day. Not sure though as honestly I felt absolutely shattered at the end. I did lots of foam rolling at home afterwards!!

We got to the airport just after midday and by the time we got through security it was lunch-time. We decided on Jamie’s Italian (yes, I know, I am little bit obsessed with this restaurant at the moment!)

I had a vegetable plank to start, which was so yummy.

I loved that they put this in the middle of the table…as if I was sharing it. Ha! There was a small ball of mozzarella and a slice of fontina cheese, some chutneys, roasted vegetables and a mini carrot salad. Oh I do love variety!

Then for main course I had my standard turkey Milanese. I just absolutely adore this dish (it’s my third time having it…)

IMG_3623So huge! And so filling. Perfect for a long day of travelling.

We then caught our flight and then had a three hour coach journey to the resort. By the time we arrived it was around midnight. We were shattered! My legs also ached a lot from the run which wasn’t so great. It was 2am Bulgarian time and we had to set our alarms for 7am to get up for breakfast and meet our group to get our skis and boots etc. at 8.45am.

I’ll talk more about the food on Wednesday for WIAW as otherwise this post will be huge. But let’s just say I’m not a huge fan of the Bulgarian food!!

The first day was very stressful. Getting up after so little sleep, rushing to meet with our group, queuing for all our bits and pieces, then meeting with our tuition group…I felt so frazzled. Then Ben and I got split up in our groups because Ben was a better skier than me (he’s been three times before) and I felt a bit lost without him if I’m honest. This was my first time skiing on snow and I was already stressed and tired so I wasn’t too happy to start with!

However, after Ben managed to calm an emotional Anna down and I began properly skiing I loved it. After flying (read: slowly winding) my way down the first slopes, I was hooked and it no longer mattered that Ben and I were apart.

And it was just beautiful. I had to keep pinching myself when I was skiing down the slopes and just seeing the views in the distance. So beautiful.

Each morning we got up early, had breakfast and got to the slopes as soon as we possibly could. We were skiing by 9am together before our tuition began at 10am. Then 12am we broke for lunch and Ben and me would try and get a couple of slopes in before the lessons began again at 1pm and finished at 3pm. Then Ben and I would meet up again and ski until 4pm. Needless to say we were shattered by the end of the day. Literally we would fall asleep at 9pm. Now for me this is no big deal (hello, I’m an old lady) but for Ben this is CRAZY talk. And in the morning our legs ached like crazy. My calves were SO tight.

Thankfully I wasn’t in the beginner’s group where they were taught the absolutely basics. I was in the intermediate group and we were taught how to parallel turn and basically improve. Though my moves are by no mean perfect, I can happily say that after the first couple of days I looked like a proper skier (not an expert, but I didn’t look like an absolute newbie!) Ben was amazing. He was a smooth criminal with his skiing and he even got to go down a black run on the last day! I got to go down some reds so I’m happy Smile

I just couldn’t believe the views. It was terrifying seeing the heights we were going when we took the different chair lifts up. I only made it to the middle of the mountain but that was just phenomenal (Ben got to the top and he said it was just another world up there). Do you know what else was terrifying? Trying to take a photo of the views when on said chair lifts. This involved a lot of careful navigating of ski poles, gloves and phone. Scary stuff.

And yes, I fell over – a fair few times I’m proud to say! Nothing major, no broken bones thankfully. It didn’t hurt at all to be honest. The snow was like a big pillow. It did dent my ego a little but, hey, I’m still learning! My instructor gave me a great compliment when he asked if I was in training for something as he said I was able to jump straight back up and carry on so easily. So there’s a silver lining!

Our hotel wasn’t the greatest I have to say. But we weren’t there for that so we shrugged it off as something to improve on next time. We already know we want to go back to the same place and we chatted around to different people and know the hotel we want to go to. So we’re putting it down to experience!

I had a couple of lovely massages though in the spa (which I definitely needed). I had a Swedish massage and an anti-stress massage. But can I just say that having a Bulgarian masseuse who doesn’t speak much English makes getting a massage a little bit awkward…

So I’m hooked! I love skiing and will definitely be doing it again. Probably next year and in Bulgarian again. It was so cheap there (all the gear and lessons) and the slopes were amazing, the snow perfect and the experience just unforgettable.

But I am knackered! We had today (Monday) off to recover and we definitely needed it. It’s back to work tomorrow unfortunately but such is life!

What I Ate New Years Day

Happy New Year everyone! Wow it sucks to be back at work. The alarm went off at 6am this morning, which definitely makes a change from my usual 8ish wake ups this past holiday. There’s something so indulgently lovely about opening your eyes naturally and deciding whether to roll back asleep or gently get up. The alarm screaming at me to wake up, however, was not.

Despite this, I am glad to be back into normal routine. There’s only so much lounging around the house that I can really do. I do get a bit of cabin fever. And I am back at the usual office so this means my commute is under an hour – possibly even 35mins! Not like the hour and a half (sometimes two hours) that it was when I was working on the customer site before Christmas. It’s heavenly.

Anyway, it’s WIAW – first for 2013! Check out Jenn’s blog for more details. Let’s get started.

 

This is what I ate yesterday, New Year’s Day, with a recap of my New Year’s Eve.

Ben and I went to our friend’s house for dinner and a games night on New Year’s Eve. It was so much fun. It was two married couples and another guy and us.

They made chilli con carne for dinner with a roasted potato and salad, which was divine (I believe they used a Jamie Oliver recipe, so perfect in my eyes!) And pudding….well pudding was a mini Eton mess with fruit on top, a lemon cheesecake and bannoffee pie. I might have had all three (half a bannoffee pie serving I hasten to add!) Well, when you’re offered… Unfortunately I didn’t take any photos as it seemed a bit rude. But I can assure you it was yummy. And I was stuffed. There might also have been a couple of cheeky G&Ts and some bucks fizz.

Then we played a quiz game which was brilliant and then Mafia. Do you know Mafia? I didn’t before playing. Two people in the group are named mafia (they find this out by what card they pick from a bunch) and thennon-Mafia people are blindfolded and then the Mafia ‘murder’ one person. Then the group has to work out who the Mafia are, and it continues in that vein…it sounds very complicated but it was actually very simple. And we had been drinking!

Then we celebrated midnight with champagne, watched some fireworks and Ben and me then had to make our journey home. We decided not to get a taxi as it would be ludicrously expensive so we walked home. All 45 minutes of it…but this was great as it sobered us up nicely. And people are so friendly saying Happy New Years even at 1.30am!

As we woke up quite late the next morning (*cough* 10.30am), I decided to skip breakfast and put our lunch in the oven ready for lunchtime…turkey again!

Oh it was so good. Turkey with onion and cranberry stuffing, roasted parsnips and carrots, broccoli and cauliflower and a dollop of cranberry sauce. Heaven. And by 1.30pm I was definitely ready for it!

Then I had some melon for pudding.

Ben and I then slobbed out on the sofa watching Harry Potter and The Chamber of Secrets (slowly working our way through them all again) and then I watched several Nigella cooking programmes. I adore that woman. She is just mesmerising. She can make boiling an egg interesting.

Then dinner seemed to swing by in no time (after a fair number of cups of tea). I decided to go for a lighter meal after the monster feast at lunch. So I made my new favourite meal – chicken soup! OK sorry I know this might be boring. [And apologies for the re-used photo!]

It was nice and warming. Then I had my obligatory two apples afterwards for pudding and then a bit later a packet of Snack a Jacks and a hot chocolate. Simple, but it hit the spot!

Also, I must mention this meal that I had the other day which was amazing.

Chicken rolled in chickpea flour and herbs and spices (paprika, onion powder, cumin, basil, & thyme) then fried, roasted butternut squash, steamed broccoli and then the pièce de résistance…cauliflower mashed with goat’s cheese. Ah let me tell you, this was fabulous! I normally have cauliflower mash with mozzarella but the goat’s cheese was just 100 times better.

And, thankfully, my running is getting back to normal! Hurrah! I’ve been having some issues with running since being ill in that it’s felt so hard. Like harder than normal. I couldn’t sprint or do any tempo runs. It was all about just making it to the end alive. But this morning I went for a 3 mile run and I added in some tempo bits and raced along happily! It felt like a normal run. I’m so pleased! Especially since I’m now on week two of my 12 week training for the half marathon in March. Whew.

Not my fastest 3 miles, but definitely back into a good feeling when running! I missed it so much (yes, yes I know I sound like a loony but it really makes you grateful to be healthy when you’ve been ill for a period of time).

Oh and on a side note. Seeing this as I walked into work this morning was fairly devastating:

A Christmas tree in a skip!! How soul destroying. Our decorations are still up and won’t be brought down until Saturday…I just find it so sad that it’s all over!
