Obsessed with eggs

Do you ever have it when you can’t stop craving a certain type of food? I’m guessing this isn’t an uncommon thing. I know it happens to me a lo [I used to eat carrot and coriander soup like every day]. I just get a type of food in my head and I just want to eat it with every meal. Eggs are my current obsession.

I just think they’re amazing. Powerhouses of nutrition within their own little package. And very versatile. You can cook them in so many different ways. But my two favourites are scrambled and fried. Personally, I think you just can’t beat a runny yolk. And with scrambled egg, pretty much anything goes with what you can throw in with it. I love scrambled egg and tuna, and onion is always a must! Maybe a few cheeky cherry tomatoes as well. Or salmon (smoked or tinned) goes amazingly as well. Ahh bliss.

But lately, my favourite salad du jour is this:

I promise you, there is feta and salad underneath that beasty egg. I made a mega egg by adding an egg white to one egg.

Within this salad there’s feta, beets, cherry tomatoes, mushrooms, cucumber, lettuce, errrm yep that’s it. It might seem like a weird combo having egg and feta but it really goes! Or at least, I’ve convinced myself it goes…

I’ve also been eating an egg white alongside my morning breakfast oatmeal to increase my protein intake. Nothing fancy, just an egg white that I zap in the microwave for like 50 seconds and have after my oats. I’m thinking of adding it actually to my oats but I quite like just eating it on its own. Makes it feel like an extension to my normal meal! There are many reason I’m not a vegan, but not being able to eat eggs is a strong argument against it. Not that I have anything against being a vegan, I fully respect anyone who is a vegan, but personally for me it would be too hard. The only foods I don’t eat are ones that I don’t like the taste of (yes, cheddar, that is YOU). But I digress.

I won’t show you me wearing them up close as, seriously, feet are gross and I hate mine especially. But I love these shoes, they’re a bit crazy, I love the colours! And the feathers!

WIAW #5

Wow I can’t believe this is my fifth What I Ate Wednesday. My blog is only in its infancy and I’m still learning and working on it to make it better, but I’m proud of what I’ve done so far. It’s got a long way to go I know but I’m happy. It’s just so great to have somewhere to put the random stuff in my head! It’s very cathartic.

I love being involved in WIAW as well because you definitely feel a sense of community and it’s great to see what other blogs are out there. So thank you Jenn (over at Peas and Crayons)! I’m still grasping desperately to summer with my summery salads and fresh flavours. Just want to hold out a little bit longer!!

 

On that note of summery yumminess, I had some fun over the weekend making these really tasty pancakes. I just kept reading about pancakes everywhere and thought as a Sunday treat I’d whip up a batch of them:

I used this recipe but missed out the cinnamon (not a big fan) and then drizzled PB2 mixed with water as a sauce and served with blackberries. I managed to get three quite chunky pancakes out of this mixture. Honestly, they were to die for!

Really spongy and filling. Basically I wanted a really filling pancake that didn’t contain protein powder as I don’t have protein powder!

Lunch time I tried my hand at making falafels. I had them in salad with some chicken fried with tagine paste. They didn’t turn out amazingly I must admit. They were a bit crumbly.

However, they tasted GREAT. I’m all about chickpeas at the moment. So yummy. Really went well with the tagine spices as well.

Dinner from Monday night was AMAZING.

I coated a chicken breast in chickpea flour with paprika and cumin and then fried it in a little oil. Alongside this I made roasted veggies with a sliced peach and crumbled goat’s cheese. Holy yum! (Yay my first holy yum! Sorry, novice moment…). This was epic. Just everything about it. I’m really enjoying peaches at the moment as well. They’re so great in smoothies, salads, grilled, baked…just as a snack. A bit more messy than apples but very juicy and yummy.

Snack-wise I’ve been enjoying beasty portions of honeydew melon:

I ate A LOT of this. It was so good. And not that bad really…erm…well, it’s not Ben and Jerry’s! I love this product and all it stands for. Fairly natural (gluten free, soya free, dairy free) and her story behind it it’s really sweet (no pun intended…sorry that was lame). Well, I enjoyed my scoffing session and life’s all about a balance! Can’t be good all the time Smile

So all in all a very pleasing WIAW if I do say so myself.

In terms of fitness, as I mentioned last post, I’m enjoying my change in running. I’m not running more than 3 miles and always following it with a strength training routine. Whether that be an arm workout, a leg workout, abs or full body. I feel really invigorated with mixing it up like this. Definitely keeps me interested! I also don’t dread working out like I used to. Waking up and thinking “I’m running 2 miles or 3 miles” is a lot easier to digest than “I’m running 5 miles”, you know? I just need to think about nutrition a bit more – I’m trying to get my head around whether I should be ramping up my protein intake and when I should be eating carbs…it’s too complicated!!

Hen Party Extravaganza–Part 1

I’ve decided to split my hen party shenanigans into two parts as both days deserve their own post.

Initially I was very apprehensive about the hen do [bachelorette party], as you can imagine. The stories you hear about what goes on and the dares that the bride-to-be are force to do…the horrible photos that get taken…And the fact that my big sister was organising it for me. So a lot of nerves! My sister is crazy. No-inhibitions-loud-daring crazy. Nothing like me, basically. I’m fairly quiet, can be quite shy, I don’t drink much, I don’t get drunk often (like twice a year) and I don’t go clubbing anymore…what can I say, I feel too old now! I like my sleep and I like waking up with a clear head.

However, I was pleasantly surprised. It was such a good weekend. It started with my friends from university coming down to stay with me until the Sunday. It was so lovely to see them as I don’t see them that often due to geographical issues and everyone’s conflicting schedules. We then spent the Saturday afternoon PAINTBALLING. It was a Hen Vs Stag affair where Ben’s friends were teamed up against all my girlfriends. There were around 20 of us in total and it was brilliant. Painful, very painful. But brilliant. And obviously they thought it would be hilarious if Ben and I were dressed in bunny suits. So everyone one else was in nice camouflaged, thick army-style gear. I, however, looked like Bugs Bunny preparing for a war:

I like to think that in a war I’d be a survivor. I’d be one of those hero-types. However, I was slightly disappointed to find that I was one of those hiding-types. A good ditch or a big tree was my friend. I’d be rubbish in war. I wasn’t a complete coward though – I did get my fair share of shooting on. I just wouldn’t get any medals…

Then we got home and showered (major issues with mud & sweat!). After getting ready, we went and had a Mexican dinner:

IMG_2063I had a grilled coriander and lime marinated chicken with green rice & garlic wilted spinach. Very zesty and yummy and not too heavy – I didn’t want to impair my dancing ability! And obviously being at a Mexican restaurant meant an obligatory Mexican drink:

P1110599Not a big tequila fan I have to admit. Also, the sneaky barman had put a double in it as he found out it was my hen party! I love my friends as well – they told me that around the brim of the glass was sugar and I, like a mug and being very unworldly, believed them. Very salty.

And then it was time for dancing! It was a fairly tame evening – both mothers came out with us (by the way, HILARIOUS – get your mother into a club and no end of amusement is had). My friends had thought up some ‘great’ dares for me to do as well…like randomly asking a guy to give me a piggy back (tick), trying to get a free dink at the bar (tick), dancing on the table (tick)… And lots of alcohol…IMG_2066Apple Sourz obviously!

The music was a good bit of cheese (hello Backstreet Boys, hello Greece Mega Mix), random people kept congratulating me, and all my friends enjoyed themselves. It was just lovely. I felt very lucky Smile

Well, we got back around 2ish – which isn’t that late I suppose (though late for me!) It was such a good evening. And I still had the next day’s adventures ahead! So, tune in soon for part 2 of my hen party shenanigans!

WIAW #5

I haven’t posted in a while as I’ve just been rushed off my feet like crazy!

 

Anyway, as it’s What I ate Wednesday, I will stop harping on…Check out Jenn’s blog (Peas & Crayons to find out more):

My breakfast from Tuesday (prepare yourselves!) was overnight oats!! I’m so chuffed I finally managed to get on and do it. I feel a little bit more part of the healthy living blogging community. That’s a tick in that box! Did I enjoy it? Well…I did, but I did miss my lovely gooey hot green (wheatgrass) oats…But it was a nice change.

So Monday night I put about 40g of old-fashioned oats, 100g of Alpro soya yogurt, a splash of coconut milk, a tsp chia seeds and a handful of berries into a bowl (not that cool to have a jar yet…not quite that cool yet) and popped it into the fridge:

Then in the morning I grabbed it out of the fridge. It looked a little suspicious to me…

…but I gave it a stir and it was lovely a thick:

It was yummy. A nice change for once in a while I think! I did make things a lot quicker getting ready in the morning though.

My lunch was my standard salad that I take to work. This time I jazzed it up with some Brussels sprouts (which I’m loving right now) and avocado (along with my usual tuna, salad leaves, beets and tomatoes). With this I had two Babel Bells (anyone else get excited about Babel Bells because you get to peel them…? Just me?)

And dinner. Well I got a bit creative and made some hummus! And let me tell you, it rocked my world:

I used a tin of chickpeas, a tablespoon (ish) of tahini paste, lots of garlic, lemon juice and cumin. Then just whizzed it all up. Served over salad and chicken fried in a tagine paste:

It was so good (if I do say so myself). And so filling. A definite winner. I do have lots of snacks through the day but they’re fairly standard and boring (apples – obviously, a banana, and a pack of Snack a Jacks Cheese and Chive flavour – the best flavour in the world, honestly I could eat these all day long).

Maybe over kill on the salads but it is a summer staples theme of WIAW! And they’re so easy to whip up. And I do love my veggies…

Onto fitness. I’m continuing on with my new line of exercise routines. On Monday I ran only two miles (it’s still so hard to not to feel funny about not running for longer, you know? It feels like I’m copping out of exercising). But it was tough! And I was totally out of breath and dying by the end:

Only 17 mins worth of running and I was pooped! I’m keeping up the intervals and it’s tough. it really makes you focus on the run. Then I did 30 minutes of ab work. The first exercise video I found on YouTube almost killed me. So I quickly switched (yes yes I’m a wuss). It still hurt but I was actually able to complete the routine!

I’m so pleased with how things are going. I definitely feel like I’m getting stronger (possibly psychological?) But, regardless of anything else, I am enjoying it! And that, people, is the most important part of exercise I think. If you don’t enjoy it, find something else you do enjoy!

Right, this was a bit of a whirlwind post. I hope to write a longer one delving into my hen party activities… But for now, happy WIAW!!

A change

How good does Friday feel? I love that great feeling of counting down the hours until freedom I can go home and enjoy the weekend, knowing that tomorrow is Saturday (=no work). Not that I don’t like my job – I love my job. But nothing beats that Saturday morning opening-your-eyes-after-a-long-sleep feeling and having the rest of the day to amble along. Ahh bliss

Last post I mentioned that I was in quandary regarding exercise and running. Once I start thinking about something I can’t stop. It’s annoying, especially when I want to sleep. In the end I had to do something to switch things up. I wrote that post Tuesday night…so Wednesday morning when I got up run my usual 5 miles I changed my mind. I still got up and still went out to run but I only ran 2 miles. Two miles??! Not worth getting out of bed for maybe? Well, after researching a bit before I found that if I put some hard-core (for me) intervals in the run it would work me harder than just running for 45 minutes. OK, so intervals aren’t a new thing. I’m behind, I know. But still, I thought, 2 miles is not even half of my usual run – how could it possibly do anything?

Two miles later and I’m pooped. Absolutely shattered. I was sweating like a beast (sorry, not a pleasant image I know).

I hit 2 miles around 15 minutes. I was VERY chuffed with this pace. OK, I was very chuffed about 10 minutes later after I stopped dying. I had still gotten up super early so still had some time left to workout (like 25mins). So I did 10 minutes on the rower.

Check out my amazing little rower that Ben persuaded us to get. [Pssst! Can just see our washing hanger – don’t we have the coolest mini-gym in the world??] It didn’t rock my world, I’m not gonna lie. It’s not the best rower in the world to be honest and I wasn’t feeling it. But anyway, I then did about 100 squats with dumbbells. I was dead after this!

Check out that hottie…. Confused smile I was a sweaty mess. More so than if I had just done 5 miles. And the next day my legs were in some serious pain (and still today!) And you know what, I really enjoyed it. It has really showed me how samey things had become and how my usual running had just stopped taxing me. I mean, yes my runs are hard and I do get puffed out, but not in the way that I was on Wednesday. I felt invigorated. Even though I hadn’t run as far, I felt like I had worked a lot harder.

Then yesterday I did my usual strength training. But I decided to push myself a bit more. Usually I waste a lot of time deciding what move to do next. Instead I searched and found a strength training video on YouTube (by a lovely trainer called Sarah. OK you might already be familiar with her, I’m such a newb!) I did a whole segment just on my arms, following what she was doing. So I managed:

OK, it might not seem a lot but it was tough for me. I generally just due a range of random weight movements without really focusing on anything. All on my arms/shoulders was tough!!

So I’ve decided to change my weekly workout. I’m going to focus much more on strength training and a lot less on cardio. Even typing that sentence worries me. I’m a cardio girl. That’s what I do, you know. This is quite a big thing to suddenly drop my miles in running. There’s always that insecurity with stopping cardio and gaining weight…a stupid insecurity based on no rational thought…But it’s definitely an insecurity I have (and unhealthy one I’ll admit).

But I know it’s probably a good thing. I can focus on building up my muscles (not massively! I’m not inspiring to be a body builder!) just to look stronger, feel stronger and be more happy with myself. If I’m honest, I feel a bit cheated with running. Don’t get me wrong, I love it and this is really tough to reduce it, but it isn’t giving me what I want. I don’t feel toned, I don’t feel like I’m building any muscle. And for the effort I put in and the miles I run, it’s not fair!

I really feel positive about this. I no longer dread my workouts and feel bored by them. It will really help me focus on what I want to achieve because it’s not longer just mindless running.

Whew! Sorry. I am so glad to get that out of my system.
